A REALLY GOOD Paleo Pumpkin Muffin Recipe!

Happy Thanksgiving Eve!

Today we are going to have a Friendsgiving at work. Everyone made a dish for our lil Blogifam potluck! Currently salivating as I write this. I CAN’T WAIT TO EATTTTTT.

Also, I am proud to tell you that I totally redeemed muffin making disaster from the other night! Look what I made last night!

And guess what, it tastes GREAT too. As in Sam-approved! Which means a lot because the other day he tasted my healthy pumpkin pie and told me he didn’t like it – I literally almost cried lol.

So here’s my recipe for…

PALEO PUMPKIN MUFFINS!

INGREDIENTS (makes 12):

  • 3 eggs
  • 2 ripe bananas
  • 1/2 canned cup pumpkin puree
  • 1/4 canned coconut milk
  • 2 cups almond flour
  • 2 teaspoons baking powder
  • 1 tsp pumpkin pie spice
  • 1/2 teaspoon salt

DIRECTIONS:

  1. Preheat oven to 375 degrees F
  2. Line muffin tin with liners.
  3. In a large mixing bowl, mix together all of the ingredients.
  4. Bake for about 30 min or until top looks slightly browned and glazed over.

NUTRITION INFO:

  • 149 calories per muffin
  • 10 g carbs
  • 11 g fat
  • 6 g protein

MUCH MUCH MUCH better than the disaster the other night! See guys, never give up. You’ll get it eventually!

Taste wise, it’s super duper moist and the flavor profile is just right. Not overly sweet at all. In my opinion, my ideal muffin. Plus there’s ZERO added sugar in this recipe, which makes me feel very happy. So, this muffin recipe is perfect for anyone who is paleo, Whole30, gluten free, or dairy free.

My recipe was inspired by Seeded at the Table’s Almond Flour Banana Muffins which uses apple sauce instead of pumpkin puree and cinnamon instead of pumpkin pie spice. I love looking up recipes, using them as a base, and then giving them my own twist!

    I made them and they are quite delicious! I can taste a hint of sweetness 🙂 I tried it with almond meal and they still turned out good! Thanks for the recipe. I am always on the look out for healthy gluten free options 🙂

    Happy Thanksgiving Cassey!! Thank you for being here. You really do make this world a better place with what you’re doing. I seriously want to let you know how thankful I am for YOU, because without you being the warm, inspiring, beautiful person that you are, I never would’ve found the motivation to continue my newfound fitness routine. And don’t even get me started on how much I’m in love with your stretching and flexibility lessons! No other trainer or coach has the same pizazz as you, they’re so boring and run of the mill! You keep my mind AND my muscles engaged, because the way you explain things makes even this Debbie Downer think “gee… Maybe even I could do that…! Maybe I CAN do it!” The way that you teach has honestly changed my perspective on exercise and encouraged me to change my outlook on myself and my life for the better.

    Ive been silently watching you go through the amazing 90 day journey you’ve undertaken, and I wasn’t sure if I should leave my 2 cents worth in among the sea of humanity flooding your blog and YouTube comments sections, but today is a special day (my absolute FAVORITE holiday, actually lol), and I feel like it’d be an appropriate time to find the courage to say what I’ve been thinking for a long while now.

    I’m very very glad for you, that you’ve decided to return to blogging (loving the posts, by the way!), to doing all the things that truly make you happy, to allowing the real raw Cassey to come through again. You’ve helped me understand that there’s no real living going on if you’re not living true and free. I’m glad you’re freeing yourself of the chains that society tried to trap you in. You deserve to shine as bright as the brightest start, and it was so incredibly moving to follow your 90 day blog posts and hear you describe your feelings and thoughts about why you’ve been dampening your personality in public… In my own way, I could really relate to what you’d said.

    I remember when I first found Blogilates back in 2011. I stumbled across your Full Body Pilates for Beginners workout which you posted in 2009. You helped me lose so much baby weight!! After having a second baby and struggling again with post partum depression, I finally mustered the courage and determination to not just get myself back on track again, but to do it harder and better this time. You were the name that immediately popped up in my head as the go to trainer, even after a good 5 years or so of not exercising! Coincidentally enough, I turned 28 on June 6th, and the next day after having solidified the decision in my mind to actually DO something, I looked and saw that you had started the Summersculpt Program the same week as my birthday was. It was as if it were meant to be lol Without your encouragement and vivacious spirit, I would never have been motivated enough to dig deep into my brains and discover the extent of my willpower, and I certainly wouldnt have been able to wrap my head around the concept of finding the joy in the exercise without your eloquent explanations of why that factor is so very important.

    You helped me find the path to a new me, Cassey 🙂 Thank you so much. The path is always there inside our hearts, but sometimes we need that spark of light in the darkness to show us the way. I hope your 90 day journey and the decision to return to fully expressing yourself gives you as much happiness as your Summersculpt program and philosophy on life has brought to me! You have every damn right to unapologetically be who you were born to be, and I’ll be right here in the background cheering you on with every blog post and video upload.
