Hey guys!

This Thursday, October 23rd, I’m teaching 2 live POP Pilates classes in Hermosa Beach for the #EvenBetter Beach Bash with Ocean Spray! My classes are at 9AM and 10AM. They are FREE to the public, but you do have to reserve a spot so Register HERE. Do it now before the spots are filled.

I would really love to see you and hang out! In between classes, we can catch up and sip on Ocean Spray’s new PACt™ cranberry extract water which cleanses, purifies, and hydrates your bod! Should be fun. Come out and play with me 🙂

Anyways! It’s so cool to see that pumpkins are everywhere! I finally got myself a fairytale pumpkin! I must show you soon. It’s so cute.

Anyway, in the spirit of Autumn, I wanted to do a pumpkin recipe for you on Cheap Clean Eats. This one is a super easy, dorm room friendly Pumpkin Pie Mug Cake recipe you can make for either breakfast or dessert! It’s a healthy, sweet treat that’s full of fiber and beta-carotene from the pumpkin! Plus, it only takes 1 min and 40 sec to bake. Let’s try this together!

pumpkin mug cake

– ¼ cup oat flour

– 2 tablespoons Stevia

– ¼ teaspoon cinnamon

– ½ teaspoon baking powder

– ½ scoop vanilla protein powder

– Pinch salt

– ¼ cup canned pumpkin

– 1 egg

– 1/8 cup almond milk

– ½ graham cracker sheet, crushed

1. Mix the oat flour through salt in a bowl.

2. Add the pumpkin, egg and milk and stir well.

3. Spray the bottom of a mug or small bowl with cooking spray.

4. Sprinkle the graham cracker pieces on the bottom.  Pour the batter on top.

5. Microwave for 1:40 – 2:20, or until set but not overcooked.  Invert on a plate and serve.

Hi All! I don’t know whether it was me or the recipe (probably me) but my Mug Cake came out like soggy orange cardboard, and thats no exaggeration 🙁

  2. Maggie says:

Hey Cassey I know you use a lot of protein powder in your recipes and meal plans and I was wondering which one do you recommend as an all-purpose one?

    1. Rebecca says:

Hi I know you asked this question a while ago but Designer Whey vanilla protein powder works great for me!

      1. Taylor says:

        Designer Whey isn’t NON-GMO. 🙁

What happened to workouts being free. Why do I have I pay for workout calendars in your app. If they are free on here they should be free to access on the app. If not there is zero point. Deleting app because it’s dumb.

  6. Alisha says:

Hi Cassey- Just wondering, what brand of graham cracker did you use for this recipe? I can’t seem to find any that’s healthy and not loaded with sugar and weird chemicals!

  7. Nikki says:

I just made this! It was soooo yummy 🙂 I made it with white flour, sugar and regular milk instead, along with granola for the topping. Thanks Cassey!

  8. Whoah, pumpkin mug cake! I have been baking a lot with pumpkin lately (duh, it’s in season, but really: love it!), I’d like to try this as well. Just too bad we don’t have it canned here in the Netherlands!

Hey Casey! I love your blog, I discovered it 3 weeks and love your videos! I just started your beginners calendar and am halfway through week one! I was wondering if you’re ever going to teach in San Francisco? I love your videos, it’s like hitting the gym with a friend, only the friend knows what she’s doing!
    Thanks so much!

Hi Cassey! I can’t wait to take your class in Hermosa beach this Thursday! Just signed up and maybe i’m probably being super oblivious but I can’t figure out where exactly the class is being held. Where can I find this info? Or what’s the address?
    Thank you so much!

    -Isabella 🙂

On another note, the pumpkin pie mug cake looks delicious and really easy to make. I think I actually have all the ingredients except for the canned pumpkin!
