Nothing matters if you don’t have this one thing… | Day 5 of 20

This morning as I was scrolling through Instagram, this quote popped up on my feed:

Wow, it was like it was made for me.

Today, by some miracle, I am pretty much healthy again. I was able to go to work, have a few meetings, and even take a Pilates Reformer class with Brittney, the Blogifam graphic designer. I honestly don’t know how I got over a really severe flu in just a few days instead of the 7-10 days it usually takes. But I guess I have my hard working body and my caring hubs to thank for that.

Being really immobile the past few days had made me realize exactly the quote above. Without your health, you have nothing. So don’t ever take your ability to do anything, even the things you hate, for granted. Appreciate your ability to work out, to run, to walk, to dance, to talk, to breathe…one day, we won’t be able to anymore. So seriously, take care of yourself!

Yesterday’s Day 5 Food Log:

Started out the day with some kombucha from Costco! Kinda digging this ginger lemonade flavor!

Sam and I went to one of our fave vegan restaurants called H.O.P.E. Guess what it stands for? Okay I’ll just tell you. Healthy Organic Positive Eating!!! OMG “positive” eating. Love it. Good thing the food is good too! These are the freshy rolls with soy chicken, avocado, lettuce, and no noodles. Hoisin/peanut butter dipping sauce. MY FAVEEEEEE thing ever. LOVE.

I always order the eggplant from any Thai restaurant we eat at. It was superb.

Green papaya salad with green beans, tomatoes, and peanuts, served on some romaine lettuce leaves in vegan fish sauce.

Later that day I tried out some Kite Hill almond greek yogurt and blehhhhhhh it was so bad!!! Just terrible. I mean, yeah, I got “plain unsweetened” BUT STILL!!!!

So I diced up a mango and thew a bunch in but it was STILL BAD!!! So I tried adding a bunch of monk fruit sugar to the yogurt, and guys, it was a struggle to get down. Sad because one of these yogurt containers aint cheap! But oh well, now I know. I actually bought like 4 different brands all in “plain unsweetened” to do a fair test and so far only one was good. It’s the So Delicious brand in plain. Have you tried? Actually SO good.

New concoction. Cauli rice with sauteed mushrooms, tofu, avocado, homemade pickled cucumbers, and sriracha. I was afraid it was going to be weird but it was fantastic! I decided to make it for lunch the next day too.

So far, being meatless has been pretty painless. I don’t really feel like I am missing out much unless I’m like literally in front of rows and rows of rotisserie chickens and they are staring at me! Ha. But that has only happened once and it was because I was at Costco and they had a bunch lined up fresh, hot, and ready outta the oven!

I am genuinely enjoying my tofu and am really loving going out to try new dishes that will inspire my cooking. Can’t wait to cook more the rest of this week.

    Your diet is full of protein and nutrients. That helps our body absorb very well and recovery will also be faster after surgery or after getting sick. Your sharing is very helpful, I will apply and try.

    Soooooo true about our health! One day in the kitchen I work at I was telling my manager about how productive and amazing I feel when I actually sleep, eat right, drink water, etc, and how I think of how much *more* I could’ve gotten done in weeks past if I had simply invested in maintaining my health better 😅 I’m so glad you’re enjoying vegetarian life though 😊

    OMG that is my favorite Kite Hill yogurt that you’re hating on. I love it so much! I really like how sour and tangy it is! I don’t mind the So Delicious either, but it’s a bit sweet for my taste. I suppose you probably just have more of a sweet tooth than I do. To each their own.

    Fit people generally recover faster from sickness in my experience 🙂 Also, a vitamin-rich and especially protein-rich diet helps a lot, because our immune system literally consists mostly of amino acids and if you have a lot of those available, you make it easy for your body to fight the sickness. Maybe that’s why you recovered so quickly.
    I had the same experience when I went vegetarian 10 years ago, I was like “aren’t I supposed to miss anything?”. The cravings kicked in sometime later, only after years, when I hadn’t eaten old familiar comfort foods like peperoni pizza or bolognese lasagna for a long time.

    So Delicious Coconut yogurt is bomb! I get the vanilla version and mix in a ripe banana or two and walnuts and call it dessert or breakfast or any time I feel like having a snack. In fact, I am about to eat that very soon. I also love tofu. I can eat it plain, just pan-fried with a little bit of oil. Going to LA actually made me give tofu a second change because I wasn’t a big fan at first. But every restaurant I tried in LA knew how to season it just right. I have been hooked ever since lol.

    Yay, happy you’re enjoying the meatless/meat-free life 🙂 Working in food & agriculture, and having been vegan for 10 years, my biggest caution for fitness & health while being vegan though is to avoid too much of the really processed stuff, especially the fake chicken, Impossible burgers, etc. We wouldn’t eat that level of processed food as meat-eaterS & a lot of us seem to forget that when we go vegan! I know cutting that stuff out & treating like an occasional treat/craving, made a huge difference for my overall health & well-being as a non-meat eater!

    Cassey, in regards to recovering from illness so quickly, I can speak from personal experience (and there is great research on this too) that avoiding animal products has ASTRONOMICALLY improved my immune system’s response to illness, especially flu & colds. I recover much faster and my symptoms are much milder. Glad you’re better and wishing you the best!

    Love the SoDelicious brand of yogurt! My husband had a bad experience with them (our local-at-the-time Walmart improperly stored them so they went bad before we even bought them), so he won’t eat it, but it’s definitely up there in terms of favorite non-dairy brands. And– off-topic but non-dairy!– if you’re on the hunt for a good ice cream and can find the Coconut Bliss brand of it, it’s just BEYOND. The sea salt caramel and chocolate one is definitely our favorite, but there are so many flavors.

    OMG I’m in the same boat with you. It took me so long to find a vegan yogurt that didn’t taste like booty. The one brand that has given me the most promise is by Silk- they have a soy yogurt and an almond milk yogurt that are both pretty bomb.
    I wish you the best in your vegan challenge! Maybe by the end you’ll find some things that you will like to stick with!

    This quote about health is so true. It’s been 3 years and 4 months that I have an autoimmune disease, and I know I used to take my health too much for granted, if though I already got a disease when I was younger, I had it quickly forgotten, and now I’m reminded everyday.

      I feel you on that. I am also dealing with an autoimmune disease that luckily hasn’t progressed too much yet, but I can see how it can get really debilitating in the future. I think back to how I used to be so active with no problem and not a care in the world, but now I have to be very careful not to overdo it. I used to be able to run with no issues. I am determined to get back into it some day.
