Healthy Pumpkin Pie Recipe

Hey guys!

Here’s the pumpkin pie recipe I promised you! This turned out SOOOOOO yummy! In the video, my good friend Davey Wavey joins us for a fun baking sesh and dance party. Please don’t judge the song choice. It was Davey’s idea.

Here’s what you’ll need!

FILLING INGREDIENTS (10 servings)

2 cups canned pumpkin, 180 cals, $1.90

1/4 cup agave, 240 cals, $2.09

4 egg whites, 80 cals, $0.60

1/4 tsp sea salt, 0 cals, $0.01

1 1/2 tsp cinnamon, 0 cals, $0.01

1/2 tsp ground ginger, 0 cals, $0.10

1/4 tsp ground cloves, 0 cals, $0.69

1 1/2 cups almond milk (1 if you don’t want it to be runny), 60 cals, $0.84

CRUST INGREDIENTS

1 cup ground almonds, 540 cals, $1.28

3/4 cup whole wheat flour, 330 cals, $0.28

3/8 cup coconut oil, 780 cals, $0.93

10 drops of liquid stevia, 0 cals, $0.04

1/4 tsp sea salt, 0 cals, $0.01

1/4 tsp vanilla extract, 0 cals, $0.26

TOTAL: 221 cals a slice, $0.98/serving

DIRECTIONS

1. Mix all of the crust ingredients together. Make sure the coconut oil is melted before you add it in.

2. Spread and flatten it into a pie pan.

3. Mix all of the filling ingredients together. Make sure you melt the coconut oil first before you add it in as well. If it is chunky, you may want to try mixing it in a blender.

4. Bake at 350F for about 45 min until the top is a nice, rich, orange color!

5. Chill for at least 30 min to help the pie stiffen.

6. Cut and enjoy!!

THE VERDICT

I know in the video I said that this was possibly the first time on Cheap Clean Eats that one of the recipes has turned into a disaster, but actually….it was really really really good. I mean. It tasted legit. Like better than legit.

I just didn’t know that it should have been chilled before we cut it! Either way though, I kinda now am loving hot, pudding-like pumpkin pie 🙂 The best part is the crust which tasted crumbly and a bit salty – it was perfection paired with the gooey sweetness of the pumpkin. Please make this recipe for your family this Thanksgiving! They won’t even know the difference!

The pie was lovely but you could probably sub that with Stevia and an overripe banana to really cut down the calories. If anyone tries this please let me know!

    Guys I made this recipe and it is probably the best recipe out if the one that I tried out which worked out the most. It is delicious, the consistency of it is just right and although I have never hadd pumpkin pie before this would definitely be my go to recipe.     This was sooooo delicious! I only used 1/8th of a cup of coconut oil and added 1/4 cup of almond milk for the crust and also only used 1/8th of a cup of agave in the filling and it was a hit 🙂 Everybody loves it and it is sooooooo yummmyyyy!     is it normal that as i leaned down a little bit even with the yoga mat some parts of my body hurt when i do pilates because mi bones hurt like from the friction with the floor/mat realy need to know cause i have stopped doing some things because of the pain

    I made this yesterday to bring to a Thanksgiving potluck dinner. It was devoured, and nobody complained that it tasted “healthy” 😀
    The only thing I would change for next time would be less cinnamon, it was a bit much. I might even try 1/2 tsp cinnamon and 1/2 tsp pumpkin spice. Thanks for the recipe though!

      I used to hate bell peppers, cucumbers, and tomatoes. I forced myself to eat them disguised in sandwiches or salads so that I didn’t taste it so much…you could try that.

    Okay, so my comment will come as off-topic and likely grab some flack, however, I have to say that today (11-10-13), I watched the ‘Cheap Clean Eats’ vid on pumpkin pie. I was really looking forward to the video, until I was saddened by watching it. The ingredients flashed before my eyes so quickly that I couldn’t follow along, Dave was letting the ingredients fly and not really helping, and then the “diarrhea” comment just disgusted me. I mean I put my kitchen ingredients away after that gross comment, because that pie looked nasty. I’m not gonna lie. The one recipe I was really looking forward to making was discouraging, overwhelming and intimidating. I couldn’t follow along, and I worry about the future of these videos, when most of it amounts to a dessert.

      OH my gosh it is so good. i made it twice. So, so good. Here are the changes I made though:
      double the spices
      whole wheat flour
      1/3 cup brown sugar total
      1 cup unsweeetened almond milk (omit coconut oil)
      vanilla down to only 1 tsp
      1 tbsp flax seed meal instead of ener-g egg.
      MAKE IT! it is sooooooo good. really tastes like pumpkin pie, but creamier!

    First of all, I would like to say a huge thank you for providing amazing workout videos and creating all these calendars, meal plans etc. It’s really nice knowing that you are rooting for people to become fit and healthy. You, and all the POPsters, provide such incredible support!

    Q – What do you recommend when we miss a workout day?

    I’ve only recently become a POPster (I did the beginners calendar through September and then moved on to ABtoberfest and now NovemBURN) and I find that at least once a month I will end up missing a workout day. For the 3 times this has happened so far, I have just doubled up the missed day with another. Do you think this is the right idea or should I be replacing my rest day with the day I missed or just skipping it altogether? It would be really great to hear your thoughts on this.

    Q – More of a request but, could you please make the app available for iPad?

    I don’t have an iPhone/Android phone but regularly use my iPad to watch the blogilates videos on YouTube. I know you can still download the iPhone version onto an iPad but it appears at a much smaller screen size and so I do not use it.

    I asked this on twitter but what do you think of vegan/raw veganism, especially high carb raw vegans, and people such as freelea the banana girl and Durian Rider who eat 3000+ calories everyday, or eat 30-50 bananas a day. I’ve noticed that a lot of HCRVs are pretty skinny and experience pretty dramatic weightloss, but do you think its mostly water, muscle, body fat, or a combo? Do you think it is somethng that would make most people lean because of the science behind it? Have you ever considered becoming one?

    I have 2 questions for Ask Cassey, and I would love it if you could answer some~ thank you so much for all you do! 🙂

    First, some people say you shouldn’t eat 2 hours before you sleep and others say that before you sleep is the best time to eat, and I just can’t come to a conclusion. Do you eat right before you sleep?

    Also, as I believe some others have asked, how much cardio should I do every week, and for how long? Will your POP Cardio videos work, or should I go out and do something else (running, biking, etc)

    If you could answer either one of these I will be sincerely grateful since I just have no clue. thanks again! Can’t wait for december 1 to start the 12 week meal plan, hooray!

    1. I eat 1/2 hour before i go to bed or else i wake up in the middle of the night hungry! i eat something with lotsa protein, such as greek yogurt or pb!

      In regards to cardio, if you are looking for online videos as an alternate to Cassey’s then I recommend Fitness Blender. They have long and short cardio videos, a mix of cardio and toning blends, and tons of other options. They have cardio vids that are much longer than what Cassey has and they will really make you sweat. I still love Cassey, but since I don’t have a lot of time for extra cardio and not a lot of options for various cardio activity, I mix Fitness Blender and Cassey to create fantastic, comprehensive, super sweaty workouts. 🙂

    I Cassey ! In case you’re reading this I want to tell you THANK YOU for changing my life, I’m goign through a hard time in my life and without your support I can’t even imagine how I would feel..whatever !
    I’ve 2 questions for you ! 🙂
    First, I can’t eat before 8:00p.m and I go to bed around 09:30p.m so I generally have 30minutes to digest my meal and then I go to sleep so is it important to eat 2hours before bed or is it pk not to do it ?
    Then, I absolutely LOOOVE fruits and I’d like to know if It’s okay to eat a fruit at dinner before going to bed ? Some people say fruits you’re eating at night are transformed as fat because you aren’t using the sugar from the fruit !
    Why people say to drink a glass of hot water with lemon juice when you Wake up ? I’ve heard it could damage some of your body’s organs…
    And then, a more “personnal” question…I absolutely DON’T know what to do with my life what job to do etc. I have NO passion ,I like make up, beauty, fashion, fitness, health, helping others to feel great about themselves and learn them to love their bodies but I don’t know any jobs with all of that stuff haha ! x) I don’t want to have a job that I don’t like…

    Ooo I always have so many questions and now I can’t think of any.

    Can I split the workouts on the calendar up and still see good results? By that I mean, because I don’t have much time, sometimes I’ll do a few videos in the morning and some in the afternoon, instead of all in one go.

    How much cardio should I do a week in addition to the calendar videos? Would every second day be good? Or should it be every day?

    Do you have any tips for not over-eating? I find it hard to merely distract myself.

    Sometimes doing some moves (especially when it involves the legs) I feel really weak – it’s not pain from overexerting the muscle – but weakness, and it seems impossible to overcome. Will this improve so long as I just persevere? Is there anything I can do to make it better more quickly? Extra exercises, stretches, running etc?

    What’s your daily routine, exercise-wise?

    It’s been one full year since I’ve been working out to your YouTube videos. I just love them and love your bubbly personality!

    1) Will the 12 week challange be free, including the meal plan notebook? Is that printable?

    2) will you ever be making a low carb meal plan? I know you said that carbs are what give you the energy to work out, but I eat way too much where it gets stored into fat. If that’s never really crossed your mind, can you PLEASE make one?(: with a vegetarian version as well haha.

    3) What would you recommend: doing strength training for someone who wants to LOSE around 30 lbs or just pure cardio? A lot of people tell me one or the other so I would really like to know your opinion(:

    1. I would do both strength training and cardio because the more muscle you have the more calories you burn. I’m not really sure how that works but Cassey has said it a lot before.

    My #AskCassey question: Should I be worried about a layer of fat, staying in between the muscle ? You know how people say that you should first lose the fat, and then workout, I don’t think it’s like that, I know that when you grow muscle, that muscle burns more fat. But is it a possibility to be a little… bulky is not the word… but not end as lean as we could ? I have a lot of fat to lose, and when I workout my abs in your videos (which I LOVE by the way) I feel like part of that fat is going to get stuck there.

    I’m sorry if this question is confusing 🙂 Another thing, I couldn’t find where to put my profile pic. Oh ! last question, in 100 Day, the criss crosses…reaching to one leg is considered as 1 criss cross or reaching for both legs is considered as 1?

      Nope, don’t worry about it. You won’t get fat “stuck” anywhere from working out. You’ll burn calories and build muscle and lose fat over time. 🙂 It definitely does not get stuck in your muscles or between your muscles.

    I love blogilates so much and youre a really good role model!
    I really want to do the 12 weeks meal plan but i have cronic gastritis and my breakfast has to parts, when i wake i have to drink water and eat some fruit or yogurt, and then like 30 minutes later i have to eat my carbs, like oatmeal or bread with honey or chiken, can i still do the meal plan although i have to eat this for breakfast?

    Being Canadian, our Thanksgiving was last month, but there may be an opportunity in the next few weeks and I’ll be curious to try it!

    #BurningQuestion – Proper Roll Ups remain elusive for me, which is frustrating. I can only get to the top by “kipping” my hips a bit, which I know is not ideal technique. Are there modifications I can use to train myself up to that level (i.e. do I only go up as far as I can and strive for more each time? Can I bend my knees?) This is frustrating because my planks are coming along nicely and I am seeing progress in other core exercises.

    im confused, if ure supose to eat (about) every 3rd hour five times a day but still avoid to eat in the evening (bcoz ur body doesnt need calories at night coz u dnt burn them while sleeping).
    when should u stop eating? 2 hours b4 going to sleep or??
    and how cn i eat 5 times a day without eating the last meals really late, bcoz of school, hobbies n workouts?

Maybe I gotta get used to see this new version more, but it would great if you separeted the nutritions facts of the super cute edition and put it on a side to see exactly how many calories do the recipe has.

    I had a couple questions if it’s okay!
    1) How can I gain muscle while eating on a calorie deficit? Or do I need to eat more, less, just how can I keep gaining muscle but losing fat?
    2) What would I do if I was stuck on a plateau for a few months and I’ve already tried changing up my routine and working out more?
    3) Is it possible to work out too much? I’m pretty young, at 14, and I have a fair bit of weight I want to lose, but I’m worried about hurting myself because I’m younger, or would being a teen be more beneficial?

    I asked this on twitter too but post it here as well, maybe some popster reads it and can help.
    I would like to know how to properly suck your belly button in? As I understand it there’s two ways of doing it, one that just makes you weaker (like emptying yourself of air…maybe) and one that makes your abs stay strong, and I don’t really know the difference so I’m afraid I’m not doing it right, and now I suspect I have protruding abs (unless it’s just my organs pushing my lower belly out). I just find this really confusing and would like a better explanation or maybe even a demonstration?

      YES! I was just about to ask this but I decided to read everyone’s comments first. I’d really love to know about this. When you play wind instruments or sing, you’re always told to allow your stomach to expand when you inhale because it maximises the amount of air you can inhale. So I’m confused about how we’re meant to suck our stomachs in. I don’t think I’m doing it right :/

      Yeah that calculation seems very off. Agave is 60cal per tbsp, and there are 4 tbsp in 1/4 cup, so it should only be about 240cal

    I’ve tried to eat meals every 3 hours or so to keep my metbalism up but to be honest I wake up too late to eat every 3 hours. So what time do you typically start and end your day? Also, is there a certain time you stop eating because I have heard to not eat after 8pm because it is not good.

      I also wake up too late sometimes, so here’s what my days usually look like:
      I have breakfast around 11 or 12 which makes my lunch pretty late, if I had breakfast at 11am I can eat my lunch around 2pm, I then have a snack around 5pm and try to make dinner around 7.30 pm. Since I (and you) sleep so long in the morning, I suppose we can stay up a little longer in the evening, right? So if I’m hungry I take another snack around 10pm.
      I think it’s okay if it’s not exactly 3 hours in between every meal, Cassey wrote somewhere to eat ever 2-3 hours so that’s why I sometimes don’t wait the whole 3h. Also about not eating after 8pm is more for people who go to bed at a reasonable time. I read on someones post in the blogilates app that you shouldn’t eat 2 hours before you go to bed. so if you don’t go to sleep until midnight, it’s probably okay to eat something after 8 pm 🙂

    A lot of your Cheap Clean Eats recipes use nuts or almond milk, and I am allergic to both! Obviously you can substitute soy milk or non-fat milk for the almond milk, but what can I substitute for pecans and other nuts?

      Hey, you can make the crust with whole grain/oat/high fiber cookies, or rolled oats blended with tablespoon of flour of choice and some banana and dates.
      It turns out good, when well pressed to the pie pan.
      If you want some healthy fats- try seeds- chia seeds, flax seeds etc.
      milk- as you said soy or regular cow but 0,5 fat. (0 fat cow milk has no sens- all of vitamins and minerals cant be absorbed by your body without even a little fat)

    My question is this (I also asked you this on twitter haha): What advice do you have for girls (and guys) trying to recover from overexercising, or eating disorders in general? Have you ever had any experience with dealing with people with EDs? I’m currently struggling to overcome anorexia athletica (or orthorexia, or compulsive exercise, or whatever people call it now) and was wondering if you had any advice for me and all of the other lovely people struggling through these awful issues 🙁

      I know exactly how you feel :/ I have been struggling with anorexia nervosa/athletica for the past two years, and have just recovered my weight after a really dangerous drop. The thoughts are always there though, and have been getting stronger these last few months. I ram incredibly afraid of my weight plummeting again if these thoughts take complete control.
      Does anyone, especially you, Cassey, have advice pertaining to eating disorders?

        What has always helped me has been working with a nutritionist and having a meal plan, logging food and exercise, and most importantly, BEING HONEST. If you are honest with yourself about your feelings, your eating, your exercising, etc. it can be easier to notice patterns — like for me it is stress. When my stress levels are high, my eating gets bad, my depression worsens substantially, and my body image goes in the tank. So I have developed the “noticing” — after all, I cannot avoid stress, and sometimes I can’t keep it at the low level all the time, due to family commitments, etc.
        I do like online groups better than in real life support groups for recovery, because just *seeing* thin women can be too much of a trigger for me when times are really bad. I think you can click on my name for my email, but it is L often (take out the space) at gmail dot com
