Happy Birthday Jackelyn!!!

Hey POPsters!

Today, it is a very special day. It is the day my best friend, my little sister, was born. Happy Birthday to the coolest, funniest, craziest sister I could ever ask for. I made a very special episode of Cheap Clean Eats this week showcasing the very cake I made to surprise her. Please join me in celebrating Jackelyn’s birthday!

If you have a special occasion coming up, I suggest you make this too. So good. Here’s the ingredients you’ll need:

– 1/2 cup coconut flour

– 1/2 cup almond flour

– 5 eggs

– 2/3 cup non dairy milk (I used almond)

– 2 TBS stevia

– 2 tsp vanilla extract

– 2 lemons (make 1 tsp of lemon zest, then squeeze juice of both)

– 4 TBS greek yogurt

– 1/2 tsp baking powder

– pinch of salt

– 1/2 cup blueberries

– 4 dates soaked in water for 1 hr (pit them)

– 1/2 block firm tofu

– 1/3 pack of tofutti cream cheese

– 1/4 cup honey

1. Mix all of the cake ingredients.

2. Bake cake at 350F for about 25 min.

3. Make the icing by blending all of the icing ingredients in a food processor. I am using the Breville Sous Chef. Make sure the dates are pitted.

4. Once cake cools, smother icing all over the cake. Decorate with more blueberries and coconut shreds (optional)

5. EAT!!! Cuz that’s what you do with cakes 😉

It ends up being $1.04 a slice and the cake makes 8 servings!

Happy Birthday Jackelyn! I love you so much! I always have the funniest time when I am with you. Thanks for being part of my life and making it so much sweeter 🙂

And this song is my fave at the moment…”Make it Up” by Sam Tsui. You can subscribe to him here and listen to his album here. Def one of the most talented artists I’ve enjoyed on YouTube.

Have a magnificent day!

It turned out SO bland and tasteless to be honest… I don’t think I will try this again, sorry!

  2. Olivia says:

Could i use 1 cup of wholewheat flour instead of half a cup of almond flour and half a cup of coconut flour? And substitute stevia for normal sugar?? Love u Cassey!!

  3. Kara says:

    Recipe looks DeLiSh!
I was just wondering if it would turn out to sub the 5 whole eggs with egg whites only?!

  4. Tania says:

  6. HumanPerson42 says:

Ohmigosh. This recipe is so yummy! I used blackberries instead of blueberries, and they broke a little bit when I mixed up the batter and made the batter a weird grey color. The end result was abnosome! I changed the icing recipe to use greek yogurt, and it was great!

  7. Elysia says:

my cake batter turned out super super watery…are my eggs just too big or what? XD

    1. Sara says:

So did mine!! I didn’t use almond flour, I used 1 cup coconut flour instead..maybe that’s the problem?

  8. Sabrina says:

Happy birthday Jackelyn! I tried making this. The icing is not working out but the cake looks ok. It’s up to taste now.

  15. Lindseye28 says:

I really liked the cake part, but the icing had a taste I wasn’t too fond of, I think it might have been the dates. Otherwise, loved this dessert and so did my family, will be making it again. Anyone have any suggestions on a different type of icing to use?

    1. Amanda says:

      try a greek yogurt frosting

is it just me or anyone else can’t stand stevia? i obviously don’t wanna use sugar but stevia has a terrible aftertaste (nothing like sugar) and it makes me feel sick afterwards.
does anyone know any other healthy substitute for sugar? please help….

    1. Roz says:

Use brown sugar – it is a little less clean than stevia I think, but it will do in small quantities 🙂

    2. Tatiania says:

Xylitol is another substitute but I have never used it so I don’t know how it behaves.
Bitter aftertaste of stevia is apparently due to high temperatures. I added 2 scraped vanilla pods into stevia container and it is a little bit better.

    3. Lauren says:

AGAVE!!!!!!!!! AGAVE NECTAR IS AWESOME! Don’t use xylitol!!!!!!! Xylitol is what they use in toothpaste and sugar-free gum… it’s not good news! Agave nectar is almost always available organic anywhere you buy it and its sweeter than sugar so you can use less of it. It doesnt taste too good by itself, but the aftertaste is tolerable…..but then, i don’t know why you’d be eating it by itself anyway haha. if youre American, try getting some at a local store, and if you like it, you can get a giant two-pack at Costco for like $10. Hope this helped!

      1. Avery Do says:

thank you so much guys! i really appreciate it 😀

  22. Kathleen says:

How about healthy, chewy brownies?! 🙂

  23. Christina says:

    Hi Cassey!
I wanted to make this cake, but I was wondering if I could substitute the greek yogurt for anything else? The person I’m making this for doesn’t eat yogurt of any kind. And I can just use plain sugar right? or even honey?
    Please answer soon =)

    1. Cassie says:

I’m sure honey is a great substitute if you don’t like stevia 🙂 same sweetness!

  24. Melissa says:

Awww that’s a sweet video! I want to try this recipe once I found the substitute for tofutti cream cheese XD
And happy birthday to your sister Jackelyn!!

Hey Cassie! I’m a big fan of your workouts and I love that you’re doing you recipe series too. I blog about healthy food, focussing on soup (my favourite). Through researching yummy yet healthy food for my baby, I have actually come across some great recipes for grown ups including a sugar-free banana and blueberry cake which looks quite similar to this one, and an incredibly tasty banana & carrot loaf. I would love it if you tried the loaf and let me know what you think, it is PERFECT guilt-free comfort food….. http://souper-woman.com/2013/04/28/souper-healthy-banana-loaf/

  33. Joyce says:

    Hi Cassey!
I was wondering if it’s ok to use 1 cup of coconut flour instead of 1/2 cup of almond flour cuz I really can’t find it anywhere. Also, is it ok to just use sugar instead of stevia?

  34. Aleasha says:

THIS IS THE CUTEST THING EVER!! It really just made me smile, y’all are the best 🙂 <3 Happy Birthday Jackelyn and keep up the good work Cassey!

  38. Sabeen says:

I sometimes wonder if this much tofu and processed ingredients, tofuti cream cheese. non-dairy milk etc are even healthy. We were taught to eat things that are made by nature and everything in moderation by my parents. But love your workouts girl!

  39. Simoné says:

Unfortunately I can’t find a couple of these ingredients in my country..Without it not being a cheap thing anymore. 🙁 Perhaps I could substitute some of the ingredients but still keep it healthy. Great video and recipe though, Cassey! 🙂

    1. Julia says:

Same here Simone! I love this type of recipe but it’s not always easy to get specialist flours and stevia for example. I actually have some healthy cake recipes on my blog – I’m not claiming to be anywhere near as good as Cassey, but you might find them interesting! I originally found them for my baby but ended up eating quite a lot myself… 🙂

  48. Sarah says:

What could be a substitute for tofutti cream cheese? Thanks.

    1. Leanne says:

That’s what I want to know too lol.. and we only get dried dates where I live 🙁

      1. Sarah says:

Ohh, I’m sorry. Maybe you could soak them in water anyway?

    2. Sinia says:

I would try normal cream cheese (if you are ok with a dairy substitution). the texture should be more or less the same…

      1. Sarah says:

Thanks for the suggestion. I’m going to try to find the tofutti at a local health food store. If not, I guess I’ll have to get non fat cream cheese.

  49. Lila says:

Cassey I’ve been following you since January, you’ve helped me lose 8kg ( 17.6 lbs)! Thank you so much for your hard work, dedication, and beautiful smile! I remember not being able to go through 3 mins of your workout without pausing, but your positive energy made me try again and again and again. Now I can go through your videos without any breaks. Its amazing how much stronger I feel and still challenge myself to go harder. You helped me engage in a healthy and more fulfilling lifestyle, something I’ll keep for the rest of my life. Exercise used to feel like a chore, now I look forward to it.

Thank you for all the time and effort you put into the workouts, honest blog entries, lovely recipes, and inspiration.
