ZERO CALORIE NOODLES – Pad Thai Recipe, seriously.



The folks at Miracle Noodle sent me a pack of shirataki noodles to try and I couldn’t wait to see what culinary magic I could conjure in the Blogilates kitchen. These noodles are ZERO CALORIE and ZERO CARB! Sound too good to be true? Well, I did a little research and I’ll tell you why they are 0 cals.

These noodles are made from a Japanese yam called konjuc or elephant yam. The end product is 97% water and 3% fiber in the form of a viscous liquid. Makes sense. They come in a bag full of water! The highly soluble fiber is known as “glucomannan”. According to a study review by University of Connecticut researchers, glucomannan can help lower bad LDL cholesterol, triglycerides, fasting blood sugar, and even body weight. Scientists in Thailand found that just 1 gram has the power to significantly slow the absorption of sugar into your bloodstream after you eat a carb-loaded meal. I’ve also heard that it helps with constipation.

All in all, it’s a win-win noodle! It was hard to find anything BAD on it. If anyone knows about something I didn’t mention, do comment!

On to my tasty Pad Thai recipe…

I was feeling quite Thai that night so of course I had to make Pad Thai! My other Thai dish loves include Pad Se Eew and Vanilla Fried Ice Cream 🙂

Here’s my super low calorie recipe for Miracle Noodle Pad Thai:

MAIN INGREDIENTS:

– 2 bags of Miracle Noodles Fettucine

– 1 chicken breast, chopped

– 1 small head of broccoli

– 2 carrots

– 1 can of straw mushrooms

– 2 green onion stalks

– 1 small onion

– 3 garlic cloves, minced

FOR THE SAUCE:

– 1/4 cup lite low sodium soy sauce

–  1/2 cup freshly squeezed lime juice

–  2 TBS of peanut butter (I used Better N Peanut Butter, only 100 cals per 2 TBS vs 200 cals using regular peanut butter)

– 2 TBS sriracha hot sauce (It was pretty spicy and I liked it but for the average person, I’d suggest you stick to just 1 TBS)

– 1/4 cup Splenda (you can use sugar if you want but my nutrition info is based off of Splenda)

DIRECTIONS:

1. Pour noodles out of bag into a sifter and let drain. Rinse with cool water. Then place in a bowl of warm water for 2 min. Pour on paper towel and pat dry.

2. Steam your chicken breast! Slice into small chunks when ready.

3. Then steam your broccoli and your carrots which should be chopped up. Chop up all your veggies.

4. To make the sauce, simply mix all of the sauce ingredients together, mix it up and place in the microwave for 20 sec.

5. Now to the pan! Lightly oil your pan with extra virgin olive oil and add minced garlic. Then add sliced onions. Once onions have turned a little clear, add the mushrooms, broccoli, carrots, and chicken.

6. Sautee a little and pour 1/2 of your sauce on top. Mix around.

7. Then add your noodles, stir, and add the rest of the sauce.

8. Lastly, garnish with some chopped green onion on top. Give a quick stir!

9. You’re done! EAT!!!

There it is! Delish huh?

TASTE:

Noodles reminded me of glass noodles at a Chinese restaurant. I loved it. Slightly chewy and it bounced around in my mouth. That was pretty fun. The sauce was so perfect – the intensity of the lime really brought out the authentic Thai taste. This Pad Thai dish was a definite success!

NUTRITION INFO (for 1 serving): 150 cals, 3.3g fat, 13.5g carbs, 4g fiber, 18.8g protein.

    I was very skeptical about how the recipe would turn out simply because I love PAD THAI, I did not think a low calorie recipe could have the right flavor. Well it was AMAZING!!!! It’ my new favorite PAD THAI recipe, Thank you soooo very much for sharing!

    Tried out the Miracle Noodles! I ordered the angel kind becuase those are my favourite noodles.. I find that these are way to small though, I cant bite through them because they are so tiny! lol. Ill use up my order but then ill probably use the fettuccine.

    As for the recipe its delicious. Great sauce!!

    Hey Cassey! I was wondering… instead of sugar/splenda, would pure raw honey work as a substitute? just wondering b/c it has less calories…

      No. It’s gonna be a completely different flavor. Use stevia or trivia instead

    I just made this recipe earlier and it was AMAZINNGGG!!! Seriously, best pad thai I’ve had and I’ve eaten my fare share of Asian cuisine. The lime juice definitely takes it to that next level! I omitted chicken (I’m vegan) and added sugar snap peas…yum!! Definitely try this one guys!
    Oh and the noodles: yes they have a funny smell when you open then but rinse well, and when you cook them they taste great with the sauce. I didn’t have any problems with the texture either.

    Lol would it be going to far to say that Miracle Noodles saved my life? Probably, but either way it has sure helped me fulfill my Italian/ French carb cravings!!

    Hi! I came across this last night and used your recipe, but made it a little lower in calorie! It was so good!!!

    For the sauce, I only used 1 TBSP of Peanut butter, the juice of one lime, 2 tbsp low sodium soy sauce, one TBSP chili paste and 1/2 packet of splenda, and I added some water to increase the volume without increase the calories and then used 1/2 in my lunch and plan on using the other 1/2 of the sauce in my dinner.

    It was so good!! I also added in bean sprouts, cilantro, and chives, I cant remember if you added cilantor or not but cilantro is KEYYYYY in this it brings out an amazing fresh tasting flavor!!

    As a tip for miracle noodles, if you let it stir fry in a non stick pan alone with maybe 1 spray of pam, and let it fry for about 5 minutes, the noodles are much better, it seems to change the texture in a way that makes it not so “jiggly” when you are eatting it, i mean its not a DRAMATIC change but its HUGE improvement, especially to those who may not 100% love the texture.

    Anyways so good

    Oh I also used shrimp instead of chicken— as a lower calorie substitute, I ended up making a huge bowl for about 145 calories!!

    This is such a great recipe! I have made this twice and modified the recipe a bit. I’m vegetarian so I use tofu instead of chicken (works great). Cauliflower and celery work well when you don’t have mushrooms or carrots. I did want to include carrots (it makes it look nicer) but I’m not a fan of mushrooms. Next time, I’m going to add more veggies and a variety of veggies! Also perhaps more tofu! I’d like to add peanut crumbles on top as well, that would be sooo good! Thanks for sharing this recipe – I know I’ll be making it again!

    I just got the Miracle Noodles, and was honestly afraid I would hate them. I love Pad Thai, and this recipe is fabulous!! I used 2 T of Sriracha (another new experience, loved it) and crunchy peanut butter. I will definitely be buying more Miracle Noodles, and eating this again. Thank you, Cassie! You are adorable.

    I tried your recipe & I loved it! I’m Asian, so I don’t mind the fishy-like smell when I first opened the Miracle Noodles package. As soon asI rinsed it in water, smell was gone. I added a tbsp of fish sauce into my pad thai along with a handful of bean sprouts, jalapeno peppers & the remaining ingredients from your recipe.Noodles were chewy, but yummy! Finally, an alternative to my love for Thai Jasmine rice. Can’t wait to try your Pho version of Miracle Noodles!

    Just made it-that was seriously the most delicious thing I’ve eaten all month. Only, I used lemon juice instead of lime because that’s all I had. And I used less peanut butter because I only have the regular kind (plus I’m doing the 90-day challenge). Still, it blew my mind away. First time using Miracle Noodles (my order just arrived today!) and I am so happy 🙂 Love your recipes, Cassey!
