Skinny Mac n Cheese for 88 cals a serving!?

Hey hey POPsters!

Ever since I started making these Cheap Clean Eats videos, I’ve been getting an overwhelming request for Mac n Cheese! It reminded me of my kindergarten days and walking down the grocery store aisles with my mom…begging her to buy me the Hamburger Helper or Kraft Easy Mac box! She always said no unless it was on sale. LOL. Well I am glad because I would have been addicted to those things!

So last week, I experimented with ways to make Mac n Cheese healthier. It was hard because it was either use cauliflower as the noodles or make it using whole wheat pasta elbows. I wanted something a little more creative…a little more out there. This is when I thought of my dear zero calorie shirataki noodles that I used to make pho with! I realized that they also made ziti noodles in the shape of baby hollow logs! It was perf.

Miracle Noodles are made of 97% water and 3% fiber and are made from the root of the konnyaku plant. This type of noodle has been eaten by the Japanese for 1000s of years so it isn’t really anything new, just new to us! This bag of ziti noodles was only 5 calories and soaks up the flavor of the sauce that you put it in. If you’ve never eaten shirataki noodles before, they come in a baggy precooked and in a sea salty liquid. You need to rinse the noodles of the aroma, thoroughly pat them dry using paper towels. Since they are cooked, you can either eat them cold or put em on the pan or in the microwave to heat. I always like mine hot!

If you want to make the mac n cheese EXTRA creamy, I recommend adding more cottage cheese! The cheddar is good for color, but the cottage is where it’s at! Here’s what my lovely dish ended up looking like after mixing up all of the ingredients and microwaving it!

    Different texture, I didn’t have a cottage cheese , almond milk, or low fat cheddar cheese. I had some plant-based mozzarella. And I added some of kinder’s buttery seasoning strirred it all together in the same pan that I boiled the water in that I drained, turned back on let the noodles, let them dehydrate more and then I added a pinch of spice, crushed pepper. Not too shabby. I would make it again too use up the bags I bought. I rinsed the noodles accordingly before cooking but I did get the basil or flavored noodle. Haven’t cooked the plain yet.

      of course you can, the main flavour comes from the sauce anyways. the noodles are just for texture and mouth feel

    I tried this with shitaki and it ended up HORRIBLE. it was watery and the sea salt taste was still there and it was really gross 🙁 how does casey make it so good??&.&:/&/&/9/xksksksksk

      I drained and then put them in my lettuce spinner and even blew them dry a little bit with my blow dryer mine is cooking in the oven so the jury is still out

    So I found those “miracle noodles” today at Albertson’s. It was a different brand name, but it was a Shirataki noodle! They were in the fresh produce section by the stir-fry noodles! And the best part is they were only $1.99 a bag! Just a heads up for everyone who was looking for them!

    Just made these for breakfast but with normal pasta. Mmmhh, with some more cottage cheese on the side, it was awesome. To me, the mustard part of the recipe was questionable, but it worked beautifully (I used normal mustard; not dry). Thanks for another great, easy recipe, Cassey!

      HAHA I did the same thing, and it was kind of terrible. Tasted good, but wasn’t melty and delicious like it should have been. I am ordering from the website, since I can’t find the Ziti anywhere locally.

      hi michelle
      i usually buy my shirataki/konjac noodles or kelp noodles in asian stores (kelp noodles aren’t the same as shirataki/konjac noodles but they have the same benefits, i.e.: almost no cals, lol).
      they might not be called miracle noodles, but these no-name ones are just as good, and a lot cheaper (esp. if you’d have to order the miracle ones online).

      just a quick word about kelp noodles to warn you: when i first bought those i was kinda grossed out by the texture they had before they were cooked (they were kinda rubbery and made a squeaky sound, really weird and hard to explain) BUT once they were cooked (i.e. after about 1-2mins) they “behaved” like normal noodles and they were delish 🙂

      what i found about any zero-calorie noodles (konjac or kelp), though, is that i get hungry again quite soon (or maybe it’s just my imagination?), it’s like when you have some water when you’re hungry; it fills you up for the moment but you’ll be hungry again soon. but maybe that’s just me 🙂
      so what i usually do is i mix in some zucchini or carrots (which i cut with a julienne knife so they look like noodles too), this keeps me full a lot longer.

      Holland and Barrett do them, they’re about £2 a bag. You can get them on Amazon as well and I was going to do the subscribe option to save money but you have to wait AAAAAGES!!! I’d rather get the H&B reward points and spend a few more pennies!

      My work schedule changes every week so I do this all the time with no problems. For example, you could do saturday’s workout tomorrow and rest on saturday. It doesn’t effect the overall workout schedule.

      I live in Toronto and, if not miracle noodles, you can definitely find shirataki/konnyaku or shirataki-tofu noodles in the refrigerated section of many grocery stores. You can find it at health food stores and asian markets.

    Hey cassey!

    You’re so cute! I was always begging for hamburger helper too and one day I got it and didn’t realize you had to add your own meat! Then I just tossed it out.

    Vegan Mac and cheeses are super popular nowadays and a healthier (though not low calorie) version I’ve tried is to use cashew butter or any nut butter mixed with miso and thinned out with water, broth, or milk! It’s SO good. Definitely give it a try!
