Chicken Lettuce Cups + DISNEYLAND!

Hey guys!

Hope you had a LOVELY weekend! I actually went to Disneyland on Saturday with some friends who were visiting from out of country and it was super fun! I hadn’t been in YEARS! I also got to meet some POPsters too so the day was quite magical. We def did all the big rides like Matterhorn, Space Mountain, Indiana Jones etc. and I was screaming my head off. Haha. I know. Disney rides are baby rides. I’m sorry, but I am a huge scaredy cat! Now…for some pics!

This is the legendary Monte Cristo Sandwich from Orleans Cafe. No, I wasn’t the one who ordered it but you bet I demanded a bite! It is what it looks like guys. It’s ham, swiss, and turkey dipped in a batter, and deep fried, then powdered with sugar, then smothered with a berry jam. It was soft, crunchy, sweet, salty, destructive, and beautiful all at once. If you ever go to Disneyland, get it so you can check it off your bucket list. Yes. Eating this should be on your bucket list 🙂

We were all sooooo hot, sticky, and DISGUSTING after rides and lunch, so the obvious answer was to cool off with the famous Disneyland Dole Whip. I had read soooo many food blogs about this dessert and just wasn’t sure what all the hype was about. When we got to the Tiki Room, there were 2 lines and they were a 20-30 min wait each. Umm. WHAT! I have never waited in line that long for dessert. But we waited, because, who knows when I’ll be back!

To the left you have the original Dole Whip. I’m pretty sure it’s made of pineappes, sugar, and whipped cream of some sort in a soft serve style. To the right, you have the Dole Whip Float! Oh man. Basically fresh pineapple juice with Dole Whip on top.

Guys, this was my YOLO on Saturday and it was worth EVERY BITE. Sweet, tangy, fluffy, cold and soft. I swear I will find the perfect recipe to make this Dole Whip healthy so that I can have it again! Watch out for a Cheap Clean Eats episode showing you how to make this…

That day we walked over 26,000 steps which is over 10 miles! My legs are actually sore today. Do not underestimate the power of walking.

ALRIGHTY! Now onto the Cheap Clean Eats episode of the week…

CRUNCHTASTIC Chicken Lettuce Cups – serves 2
– 1⁄2 pound boneless, skinless chicken tenders

– 1 clove garlic, minced

– 1 tablespoon natural peanut butter

– 2 tablespoons unsweetened coconut milk

– Pinch cayenne

– 1 packet sugar substitute

– 1 tablespoon Greek yogurt

– 1⁄2 red apple, chopped

– 2 celery stalks, chopped

– 1⁄2 green onion, chopped

– 6 leaves iceberg lettuce

– 2 tablespoons peanuts, chopped

TOTAL PER SERVING: $2.30

DIRECTIONS:

1. Heat the garlic in a skillet coated with cooking spray for 1 minute.

2. Add the chicken. Sautée the chicken for 2 minutes.

3. Add in the peanut butter, milk, cayenne and sugar substitute and cook until no longer pink.

4. Set aside to cool. Stir in the yogurt, apple, celery, and green onion.

5. Spoon into lettuce leaves. Sprinkle with chopped peanuts.

CALORIES: 236 | Protein: 30 g | Net Carbs: 8 g | Fat: 9 g | Fiber: 3 g

This was another variation I did the other day where I added baked Garbanzo beans on top! It was sooo super delish. I love Garbanzo’s because they taste so nutty/meaty and yum!

    Glad you enjoyed Disneyland! Love the Monte Cristo and Dole Whip! Those are my go tos when I go to Disneyland (I don’t go very often so they are always my treats). You should try collecting pins! Those are fun and you can also trade with other park goers!
    I love your meal plans and recipes! They are really good to be designed for one person. Starting in 2 weeks I will need to feed myself but it is hard finding foods I usually eat with my family to be made as a single serving. These are great and healthy!

    Delicious! I accidentally used almond milk instead (same color container and right next to each other) and it still tasted good. I have to try it again with the right milk this time

    This was my first cassey recipe and I loved it! I’m only 15 and it was super easy to make and tasted delicious. My family and I all really enjoyed it. Instead of peanuts though, we replaced them with cashews and I think that was a really good substitution. I’ll definitely be making more of this recipes later on.

    Nubi and yummy or something yogurt both serve the same frozen yogurt. My BFF and I did tons of research trying to find the mix and when we learned it was something used in other places than Disney we got excited.

    I know in some place on the internet there is a video on how they actually make the mix (sort of) it was from the Dole company.

    My husband and I went on a date on Friday night at Downtown Disney and tried Earl of Sandwich for the first time! Such incredible hot sandwiches! He got The Full Montague which is ham, turkey, bacon, Swiss, cheddar, tomato and lettuce and I got the Hawaiian BBQ which is Ham, pineapple, and BBQ sauce. We split them so we could try both and then got a brownie peanut butter dessert sandwich thing which is just two brownies with peanut butter cream in the middle. It’s like a giant Reece’s and is SO GOOD!! We will definitely be back to Earl of Sandwich for YOLO meals!!

    Check out wholesisters on Instagram. They have a totally clean dole whip that you could use or use as a jumping off point. I think they just blend frozen pineapple, unsweetened almond milk, and unsweetened coconut flakes. Then they top it with whipped coconut (solid part of full fat coconut milk). Love Disney and will have to try the Monte Cristo! I’ve had different versions, not quite as unhealthy, but this fried version sounds good!

    My bf and I went in June, and we literally ate everything since we live in Texas and won’t be back for a while. We had a really nice dinner and the Wine Country Trattoria in California Adventures. Omg I had the lamb and it was heavenly. Like melts in your mouth perfect. I also opted for a churro every chance I got. Damn it, now I’m having Disney withdraws.

    I love that they, Disney world, have gluten, dairy and sugar free options for those that have sensitivities. My mom and I had the ice cream from the main ice cream parlor on Main Street. I loved it. That was more like a yolo weekend for me, but it was so worth it. That was my first time going to Disney world. I loved it.

    Eeeeek I am a disney fanatic! I am fortunate enough to be able to visit Disney World a few times a year. Cassey, do you have any tips for eating healthy at amusement parks? I know that the key is self control with a liiiittle wiggle room here and there, but I’d love to hear some suggestions! Resisting Mickey-shaped anything (ice cream bars, waffles, pretzels, etc.) is quite the challenge!

    PS – Pocahontas and Ariel are my favorite and I named my first dog after Lady from Lady and the Tramp 🙂

      I don’t know how it is in Disney World. But in Germany you are allowed to take your own picknick to most of the amusement parks (sometimes there are even picknick places available)…..

      So if it’s possible, you could pack some healthy lunch and snacks that fill you up (I always take apples and some salad or sandwiches) and go for an ice cream without feeling to bad at the end 🙂

    Favorite meal is the slow roasted sirloin at the Blue Bayou, with the seasonal vegetable mix and the spicy au gratin potatoes. Yummy!

    Sleeping Beauty is my favorite princess.

  24. *GULP* That Monte cristo and Dole Whip look soooooo amazing……I’ve never ever heard of them but I can’t wait to try them. I normally order healthier options bcause it just feels BETTER in the end! But I’ll take your advice on these recs. 😉

    Sigh, another missed opportunity to meet Cassey! I was at Disneyland on Saturday celebrating the end of Dapper Weekend but the heat was horrible! I only imagine I could have passed you and never knew it! I glad you resisted the urge to chow down on the Monte Cristo in its entirety. I actually split the dish with my fiance… and it was awesome!

    Cassey! According to everything online, Dole whip is not THAT bad for you (compared to the other disney treats!). It is only 90 calories, and is vegan, dairy free, and gluten free! With all the walking done at disneyland, I hunk it is safe to say Dole whip is nothing to feel guilty about!

    That sandwich looks amazing. I think my favorite disney food is actually their popcorn, I swear just smelling it makes me crave it so good, so salty haha. It’s hard to choose a princess because I love them all! But when I was younger I was really obsessed with Belle. As in so obsessed I used to tell people my name was Belle (my mom would play along haha).
