Vegan Summer Rolls! Perfect. Plus Nike Free Winner.

Hey guys!

Just wanted to share with you my current food obsession of the moment. For dinner this evening, I had vegan spring rolls! Too easy to make and wayyyyyy cheaper than in the restaurant! It’s seriously my favorite Vietnamese dish and I actually grew up eating these, but a not-as-clean version that had loads of vermicelli noodles, maybe a fried onion, and some fatty pork sausage inside. Looks light because it’s all transparent and everything, but those things inside add up!

In my version today, I’m using sauteed tofu and a variety of veggies to stuff my rice wrapper with! Check it out:

Ingredients:

Firm or extra firm tofu cut into rectangular “steaks”

– Cucumber

– Carrot

– Alfalfa Sprouts

– Spring mix lettuce

– Rice paper

– garlic

– Soy Sauce

– Pepper

– Stevia

– Sesame Soy Ginger Vinaigrette

I am not putting amounts by the ingredients only because  you can really stuff it as much or as little as you want. I just like to leave the ingredients out, stuff and roll as I go until I am full!

Directions for tofu:

  • Cut tofu into rectangle steaks. Marinate for 5 min in a soy sauce/pepper/stevia blend to taste. You can also use another sweetener of choice.
  • Heat pan, put some oil on the pan (sesame oil is great), and throw minced garlic on there. 2-3 cloves.
  • Lay tofu slices on the pan. Wait until 1 side is slightly browned before flipping.

Directions for rice paper roll:

  • Wet the rice paper in a bath of water. I like just filling a large shallow dish with water and leaving it on the table. Then I spin the rice paper like a disc in it until the whole thing is wet front and back.
  • Put your veggies on. Then your tofu. 4 slices will work great!
  • Rice paper should be soft and flexible now. Roll like a burrito.

And what dipping sauce did I use? Usually if you mix Hoison sauce with lime and some sriracha, it is HEAVEN! But I didn’t have any laying around today (plus it has so much sugar) so I used my fave salad dressing from Trader Joes: Sesame Soy Ginger Vinaigrette! It was perfect.

So filling!! Looks light but I was done after 3 of these rolls! (The one above is 1 roll cut into 2).

    Great idea.. !!!I was looking for alternative use of tofu to use the left over. I am going to do it so, to avoid ending buying chicken Shoarma rolls when I am craving for food.

    sharing one of my recipe with tofu.
    I fry gently cubes of tofu on a separate pan with olive oil (I am from the south of France and olive oil is our main ingredient for frying). in another pan, I fry a finely sliced onion, then I add sliced courgette or cut into cubes(another widely used veg in South of france), then chopped fresh pealed tomatoes (with no seeds), garlic (south of france again!) and a pinch of cayenne and salt and the tofu.When the vegetables are tender, I mix in spaghettis or tagliatelles but for a healthy change I am going to try quinoa or even boulghour (wheat)
    You can even skip the cayenne pepper and use origan and basil for a more Provençal taste!

    Hey! I LA LA LA LA LA LOVE the recipes you post on here! They have done WONDERS for my body as well as the videos. However, I was very sad when I downloaded the iPhone blogilates app which contains only a few recipes. I’m sure y’all are working on adding more to the app, but it is way quicker too whip up the recipes via the app. I also love the nutritional information for them all, but some are vague with only the calories posted. Anyways, those are my opinions on tweaks that I would like better, but it won’t inhibit me from enjoying this site and all the great things you’ve brought into my life!

    I made these for lunch today and substituted the cucumber and carrots for snow peas and lettuce, what was around the apartment, and I am IN LOVE! Cassey not only are you helping me slim down with your workouts but these awesome meals too!

    This looks so good! I love light Asian inspired dishes for the summer! I wanted to make this with tempeh but couldn’t find the normal spring roll wrappers at my local grocery store and was too lazy to drive to the Korean grocery.     My fave reciepes lately? Today I made baked green peppers filled with mushrooms, millet, buckwheat, garlic, egg whites, soya, onion and some spices. I added tomato sauce and fresh tomatoes, brocolli and cucumbers. Yesterday I made hummus from garbanzo beans, tofu, garlic and some spices. And I make fruit ice creams, for example from banana and apricots. It’s sweet and creamy and there’s no sugar added. 🙂

    In the summer, I love replacing a meal here and there with smoothies. Fruit medleys are always good but I also like heat-beating combos like cucumber-mint smoothies 🙂
