Sweet Protein Pancake Omelet

 

I must share with you what I had this morning!

I’m a girl who loves cooking, but only when it includes very few ingredients and not so many steps. So today I fooled around in the kitchen with some of my staple ingredients and ended up with something that was a mix between a pancake and an omelet.

I call it the Sweet Protein Pancake Omelet.

Oh yeah. I’m so good at naming things. Pshhhhhhhhhh!!!!

Its just a wee more eggy than a normal protein pancake so that’s why I’m calling it an omelet. I wanted something semi sweet this morning but not as “bready”. It ended up being really quite delish!!!

INGREDIENTS

– 1/2 scoop vanilla protein powder
– 1/2 TBS psyllium husk
– 3 egg whites
– 1/4 cup of water (you could use almond milk if you wanted to add some creaminess)

DIRECTIONS

– Whisk together until all chunks go away (if there’s some left that’s ok)
– Lightly spray medium heated pan with PAM cooking spray
– The batter will be more liquidy than usual, but don’t worry, pour it on
– Flip after about a min or so

It was really good!!!! I had it twice today! I don’t know whether to think of it more as a pancake or an omelet but my taste buds were satisfied.

Whole recipe: 130 cals, 24g protein, 5g carbs, 1g fat

    I just tried this and… I don’t know what I did wrong, but it was horrible! I didn’t have any psyllium husk or chia seeds or whatever so I used a TBS of oats because I thought it might be important for the consistency… But it didn’t turned out great at all. First, it didn’t stick together like in the photo, it was more like scrambled eggs or more like egg whites because it stayed white till the end. And it tasted like a glibberish nothing with a little artificial vanilla… help?

    I made this with ground flax instead of psyllium husk and ate it with a p of turkey and it was like a healthier egg mcmuffin! Love it! Thanks!

      psyllium husk at trader joes, it’s like 6.99. Try any type of protein powder – I am still looking for a good one.

        Check out IsoPure, they have a Vanilla flavor with zero grams of carbs and 25g protein per scoop, it’s been my fav!

        You’ve been mentioning you get all these foods at stores like Trader Joes, but we have nothing like that in my small town! We have a Wal-Mart, some smaller, but similar supermarkets, a farmers market, and a Co-op of which they sell all natural food items, but totally spendy. Any alternatives?

          The Co-op usually has a member discount. Not a bad idea to join. Many also pay out a check once a year to members of excess money (co-ops are not for-profit. They are member owned and it is usually free to become a member).
