No Sleep, Healthy Apple Pies & Butternut Squash Soup

Hello hello. I am alive after being up for about 28 hours straight. I took a 4 hour nap, ate, baked, and am so done with printing shipping labels. So done.

For those of you that follow me on facebook, you knew that my shipment of bags came in yesterday! I was SO HAPPY. Remember how devastated I was earlier in the week about how I wouldn’t be able to make your Christmas deliveries? Well, this holiday season, someone was on our side. The bags came Friday afternoon – so I had to cancel my Corset workout shoot. I ended up lifting and pushing heavy boxes for a good 2.5 hours.

So yeah, stayed up ALL NIGHT and ALL MORNING to ship your packages. I watched the sun set and rise in the same outfit. When was the last time I pulled an all nighter? Seems like such a high school or college thing. I was printing labels and my mom was helping to pack the bags. We shipped EVERYTHING today. I can’t believe it. I am so tired!!! So if you guys ordered, you should be receiving your goods early this week if you’re in the US! I’m excited for you!

I really don’t know how I am surviving on such little sleep. I mean, even before this. My sleeping habits suck to say the least. I don’t drink coffee either – I hope this doesn’t come and bite me in the butt one day!

Naturally, I had no energy to workout today so I decided to take a breather. I haven’t been baking or creating things in the kitchen very much, so it was time to take on a new recipe for my relaxation day! A while back I asked you guys what your fave holiday treat was and a bunch of you said Apple Pie!! Mmmm!!! So I thought why not try making a healthy version?

They look good don’t they? Well, let’s just say that Cassey and making healthy versions of stuff gan go too far sometimes. This was one of those times. I would only bake these muffins again for my enemies. No one should have to expose their taste buds to such degrees of unsatisfaction.

The filling however was great! I got that from The Gracious Pantry. I modified a bit and used the following ingredients:

  • 1/2 cup unsweetened apple sauce
  • 1/2 TBS of ground cinnamon
  • 2 TBS Craisins
  • 1 apple
The crust was my own medley of vanilla protein powder, flax seed, oats, egg whites, and a pinch of salt. The dough actually tasted great! So I thought I was onto something. And when my pies came out perfectly golden, I was like “EUREKA!!!” 

BUT. When I actually bit into one of these babies, my mouth was like “EXCUSE ME???”

So I made Spicy Asian Butternut Squash Soup.

I was not going to give up at being successful in the kitchen. Lucky for me, my concoction actually tasted very good! Here’s the recipe 🙂

INGREDIENTS:

  • 1/2 butternut squash – microwaved or cooked in oven until soft inside. I microwaved mine for about 10-15 min.
  • 1/2 cup of chicken broth
  • 1/2 onion, chopped small
  • 1 cup water
  • 1 TBS sriracha hot sauce or “rooster sauce” <– yes I’m serious
  • 1 TBS dried basil
  • 1 tsp of fish sauce or soy sauce
  • 1 tsp of paprika
DIRECTIONS:
  1. Cook your squash, then chop off skin
  2. Place in blender
  3. Add chicken broth
  4. Blend
  5. Then heat pot, sautee onions for a couple minutes on the bottom until slightly browned
  6. Pour mixture on top
  7. Fill the blender up with the 1 cup of water, blend to get the goods out, and then pur into pot
  8. Season like I did above, or get creative and spice it up yourself anyway you like
This recipe was wonderful and tasted so good piping hot right out of the pot. I’ve had butternut squash soup before with butter, and although it tastes good, I will never get myself to throw butter in a perfectly tasty soup like this. You really don’t need it!

    Pulling an allnighter, that’s dedication right there!

    Don’t worry on the kitchen mishap. We all have them. I had every intention of making kale chips for the first time, and realized I made collard green chips when I picked up my bunch to put back in the fridge.
    They were not yummy to say the least. Maybe it was just my lack of seasoning skills.
    That soup looks good though. Might have to try it this weekend!

    Could you deal with the topic of lipedema on your blog? I was diagnosed with it one year ago because I could not loose fat on thighs, hips and calves. Only solution: liposuction!
    In worst cases women suffer from pain and lymphedema as side effects from the desease.
    I love your workouts, they made my body fit under my layer of fat 😉
    But I miss the old workouts, that were a more about lenghten the muscles trough classic Pilates moves. Nowadays its more about strenghtening with excercises like squats, which can bulk if you do too much of them.
    I hope some day you get back to this or do a ballet-inspired class.
    That would be great!

    You look stylish while moving those boxes 🙂 One of my friends is like that, too. She can stay up for days without drinking any coffee or anything and then sleep for 3 days. Isn’t that strange? I read somewhere that this has to do with your DNA. Some of us have mutated genes that allow us to sleep less while the rest of the population needs their 8 hours of sleep.

    Wow… it’s so tough to do all that on little or no sleep. I don’t sleep great half the time hence the coffee addiction! Those muffins look great! Hope you are able to catch up on sleep soon. xo

  8. So the pies didn’t turn out right?! They look SOOOO good! I wish they had come out okay! Glad you got all you’re work done and are able to take a breather now!
