It’s Bacon Time! Eggplant Bacon that is 😀

Hello hello!

So one of the most EXCITING recipes on the Vegan Challenge Meal Plan is the Eggplant bacon Caesar Salad. I’ve been dying to make this ever since I picked up this book Appetite for Reduction – 125 Recipes fast and filling lowfat vegan recipes.

A lot of tasty vegan food can turn out to be VERY rich in flavor and calories due to the use of nuts for that creamy taste and texture. That’s why the vegan restaurant stuff is soooo fantastic! Although healthy fats, extra calories are still extra calories if you don’t need em! So along with my other regular vegan cookbooks, I felt it was necessary to get this one too to see how creative I could get with my fruits, veggies, and grains.

This was so quick and easy to make! And super tasty too! Check it out:

For Eggplant bacon (4 servings):

– 1/2 lb eggplant

– 2 TBS soy sauce

– 1/2 tsp liquid smoke

DIRECTIONS:

1. Preheat oven to 425F.

2. Cut eggplant into 1/8″ thick slices.

3. Spray parchment sheet with PAM and then lay the eggplant pieces on.

4. Bake for 8 minutes!

5. Then flip and bake for another 3 min. They should be browning.

6. Then remove the tray and let cool while changing the temp to 350F.

7. Take the eggplant pieces and dip them in the liquid smoke and soy sauce mixture. Then lay them back on the tray and bake for another 3 min! DONE!!!!

Per serving: 100 cals, 5g fat, 12g carbs, 5g fiber, 4g protein.

Salad:

– 8 cups chopped romaine lettuce

Caesar Salad Dressing:

– 2 TBS chopped shallot

– 2 TBS cashew pieces

– 1 TBS tahini

– 1 TBS miso

– 1/2 cup water

– 2 TBS lemon juice

– 1 tsp dijon mustard

– 1/8 tsp salt

DIRECTIONS:

1. Blend it up until smooth! Done!!!

Per serving (about 3 TBS): 60 cals, 4.5g fat, 5g carbs, 2g protein.

    Oh, I so want to make this. I adore eggplant. I don’t have any miso. Is there a sub I can use for that? And what kind of miso would I need to buy for this recipe?

    Although not vegan I read that worcestershire sauce can be substituted for liquid smoke, although not the same flavour it will give the eggplant some ‘depth’.

    Just a note regarding the miso: traditional miso has smoked fish in it so double check to make sure it is vegan…

    Did you know that consuming real bacon, potato chips and other processed meats shortens your life? A good reason to go vegan and cut out those chips!

    This sounds soooo good! I love eggplant. One of my favourite ways to prepare it is by piercing the eggplant a couple of times with a fork and putting it directly on top of the grate until the skin gets blackened from all angles. Then you put it in chilled / cold water take it out quickly and remove the eggplant “pulp”. This gives the eggplant a nice smokey flavoure. I then season with whatever I have on hand though my favourite combo is tahini, chives, cilantro or parsley and some garlic. Another combo is tomato paste cooked in a little bit of olive oil or coconut oil and onions, peppers, garlic and cilantro, sometimes I add coconut milk, then you add this mixture to the eggplant. I cant find liquid smoke here in the Dominican Republic but I’ll make this recipe work 🙂

    really liquid smoke? Sounds interesting, never heard of it before, but I read on wiki: “European Food Safety Authority has found that some liquid smoke products contain genotoxic compounds..” I guess thats why they dont sell it in any czech supermarkets.

    I just discovered your blog and tumblr a few months ago and it have inspired me soo much! I have been exercising regularly for many years, but have gotten tired of the exercises I know of and have always done. Your challenges and routines have helped so much on finding new ways to exercise that I just have to thank you. You are a great motivator!
    Also I have been a vegetarian for almost three years now, but usually stick to a couple of recipes that I am familiar with and therefore I was immensely happy when I saw your vegan meal plan! I can’t wait to try your eggplant bacon, it looks delicious.
