Healthy Ice Cream Sandwich Recipe
|

May 30, 2013

Hey POPsters!!

Ah, the second Cheap Clean Eats episode is here! This weekend when my sister visited, we headed over to Diddy Riese by UCLA to share an ice cream cookie sandwich. We got 2 cinnamon sugar cookies with strawberry cheesecake ice cream inside. It was super yum and was also part of her graduation food fest extravaganza! You know, even though eating out can really add up, it inspires my creativity in the kitchen. I love cookie sandwiches so I just HAD TO find a way to healthify this dessert!

Luckily…you know, and I know how to make healthy cookies…and healthy ice cream already.

So this one was a piece of cake!

INGREDIENTS:

– 2 ripe bananas

– 1 cup of rolled oats (dry)

DIRECTIONS:

1. Dice banana into coins and freeze for a few hours or overnight

2. Place dried oats into a food processor and grind into oat flour

3. Pour oat flour into a bowl and mash with other banana with hands until a dough forms

4. Make 4 cookies and place in oven for 15 min at 350F

5. Cool cookies

6. Take frozen banana coins and put them into the food processor and blend for 1-2 min until it forms a cream! (It’s like magic!)

7. Scoop ice cream onto cookie, sandwich it…

8.  AND EAT!!!!!

OMG!!!

A regular Diddy Riese oatmeal cookie is 195 cals each. A whole sandwich with vanilla ice cream is 560 cals. Our Blogilates Ice Cream Sandwich is only 260 cals! That’s like half!! Now let’s talk about price. I bought my sandwich for $1.75 which is still a great price. But this baby is a winner on the Cheap Clean Eats list…look:

Bananas: 2 at 19 cents each = 38 cents

1 cup dried oats = 60 cents

TOTAL: 98 cents for 2 ice cream cookie sandwiches! That’s 49 cents each!!

CRAZY!!!

Now go make this cookie and tag it #CheapCleanEats on Instagram so I can find it! Good luck and eat well 🙂

I tried this and it didn’t work out so well. I’ve made the banana ice cream before, but it was a runny brown mess this time, even after being in the freezer again for 45 minutes. I also didn’t have regular oatmeal, so I used Quaker Oats Maple & Brown Sugar. I used three packets (1 1/2 cups) because before the mixture was too runny. I just threw it away. 🙁

  6. Ally says:

i just made these! They taste so good! One thing I did different was I added a touch of Peanut butter. Mmmmmmmmmm. SO GOOD!! Thank you.

  7. Helene says:

I definitely want to give these a try! Can’t believe I missed these! However, I can’t find them in the app, is that correct? Love eating clean 🙂

    Hai Cassey!!
Just made mine, they’re in the oven, but they look very thick, and wide 🙁 Is this meant to happen?? It was really hard to even make a ball out of the dough, and I’m worried that they’re gonna come out horrible. Also, if I don’t like peanut butter, what should I replace it with?? Tried yoghurt, but it tasted horrible :'( I’m not a very good cook…. xoxo

  9. Stephanie says:

cookies where abit bland but the icecream tasted soo good, I just kinda ended up eating the icecream. However cookies where pretty good for just two ingredients! 🙂

  10. fifine says:

    How banana-y do these taste?
Guttingly I hate banana and they feature in all your best looking dessert recipes!!

Or is there an alternative to banana?

    1. izzy says:

I was hoping there was an alternative too! I’m allergic to banana so I can’t try many of her recipes even though they look so tasty!

      1. Laura says:

You could always try apple sauce for the cookies!

  11. Sandra says:

I didn’t care much for the cookies. To me they were kinda bland but the ice cream maid up for where the cookies failed.

  12. It looks like it is very easy to do this dessert 🙂 I definitely try this. And it includes banana..mm.. my favorite fruit!

  13. Miss A says:

Can i replace oats with honey nut cheerios? haha (:

  14. Kayla Wheeland says:

I made these today and thought that it was a very easy recipe. Tasted good. The only thing I would change is the sweetness level. Thanks for the amazing recipe!

  15. Carolyn says:

My cookies were wet and heavy

    1. Giciny says:

Was it like that after the icecream or after baking?

  16. Carolyn says:

My cookies were wet and heavy. Don’t know what I did wrong

I’m going to start my own blog in the near future but I’m having a difficult time selecting between BlogEngine/Wordpress/B2evolution and Drupal. I was giggling so much watching your Gentleman-interlude-dance – love it! 🙂 Also cannot wait to try making these, I love the two ingredient cookies and the banana “ice cream” from your previous posts, so this is going to be AMAZING. I might try mixing in some strawberries with the banana to make a strawberry cheesecake-esque flavour…NOM.

  33. Rebecca says:

Super healthy and clean! Although these were delicious, they didn’t taste like a normal, unhealthy ice cream sandwich so if you are looking for an unhealthy tasting ice cream sandwhich, this is not the recipe for you. It tasted amazing for a health food though!

  34. Gabby says:

The cookies are cooling off as we speak! Cannot wait till they’re done and cooled so I can try this recipe! Ice cream sandwiches are by far one of my favorite sweet treats, so excited ^_^ Btw this video was HILARIOUS, you are too funny and adorable! Hahah <3

  35. Nina says:

Made it! Only, I added some raisins to the cookie dough and made two flavours of icecream by adding a little cacao powder to half of the banana ice cream (I know, it is cheating, but not too bad).

My boyfriend was really happy with me, as we agreed on one week of no sugar / sweets/ snacks allowed just yesterday and he loves his evening snack 🙂 So I made him this instead. Just as good or maybe even better than the ice cream and cookies from the factory and really no work at all. Thank you, Cassey!

  36. jay says:

it’s Ahhh-mazing! totally simple 7 easy to prepare.. i am salivating while watching you eat those icecream sandwich cookies.. ohhh… yumminess! i’ll do that for sure especially now that the weather here in the phillipines is stil hot..

    thanks cassey! <3

  37. Dalia says:

Hey, Cassey!! I have been following your website for a while now, and I LOVE IT!!!
Is there a way you can make a video about healthifying CAKES?

  38. Analisa says:

I made this but for the ‘ice cream’ I used my yonana maker and swapped 1/2 cup blueberries for 1/2 the banana… Nomnomnom…

  39. Cassey, I love the look of this video and the way you started it! Hehe, very cute and artsy. These sound tasty~I love to eat banana soft serve at night when I’m feeling lazy and I don’t want to go out and buy froyo. 😛

  40. Yasmine says:

    Can’t wait to try!!!

Can you PLEASE PLEASE PRETTY PLEASE healthify cinnamon rolls?

    1. Nina says:

      Yes, I double that request!

      1. Montana says:

        tripled!

        1. Eva says:

          quadrupled!

          1. Elizabeth says:

            … Quintupled?

    2. Lucia says:

      Quintapled

  41. Dena says:

Yay! I’m gonna have to try this! I just have to actually save some bananas for this (I usually eat them up as soon as I buy more, lol).

  42. TJ says:

LOL your video made me giggle like crazy. I want to try this out, and your other recipe but I don’t have a darn food processor! =(

    1. DogTimeWolf says:

Hey, a blender works just fine. That’s what I use and the results were yummy 🙂

  43. Jackie says:

I wish I could eat this but Im allergic to bananas 🙁 is there a substitute for them?

    1. Jenn says:

You could probably use a flax egg for the cookies, and just switch the banana for another fruit for the ice cream 🙂

    2. Jennifer says:

Actually any frozen fruit would work, but maybe add a little almond milk or greek yogurt to it. Banana’s just work best because they already have that ‘creamy’ texture to them.

      1. Jessica A says:

Add avocado to another frozen fruit like mango, the texture will still be creamy 🙂

  44. Ann says:

    This.was.heaven <3

  45. Jess says:

You are cracking me up – I LOVE this video!!! especially the dance.
I happen to have a special place in my heart for ice cream sandwiches so I’ll be making this very soon. Thanks for the great recipe!

    Xoxo

  48. Cheryl says:

Huge hit Cassey with my kids! They usually like ‘store’ purchase icecream bars, but when they tried these they wanted seconds. I was not so sure how ripe the banana’s should be, so was lucky to pick some with just a few black spots. Thanks so much for this recipe, it’s a hit with my family. 🙂

  49. vivien says:

OMG Cassey, you are so cute and positive!! I had to smile all the time watching your video! 😀 😀 Have a great day!

    Hey Cassey!
This recipe looks friggin amazing. Bananas are the BOMB.
So funny: I went to Diddy Riese for the first time ever yesterday night. DEELICIOUS. So I am so happy there is a healthy version I can make at home!

Question: can this recipe be done sans-food processor? Could I use a magic bullet blender instead?

    X

    1. I’ve tried making the banana ice cream in a magic bullet before and it worked really well (:

    2. Ashley says:

I use the magic bullet for everything! Works ah-mazing.
