Healthy “Chipotle” Vegan Burrito Bowl!


Hey guys!

I just got off a 20 hour flight and am laying in my hotel bed blogging to you! Tomorrow (Sunday) I am teaching POP Pilates for the first time in Malaysia! I’ll be at the Zespri Sungold KiwiFest and looks like it’s gonna be a HUGEEEE class! I am SO PUMPED! I cannot wait to see you!

Yield: 1 serving
Serving Size: 1 bowl
Prep Time: 10 min
Cook Time: 20 min



  • 1/2 medium head cauliflower (about 300 grams, riced)
  • Pinch of sea salt
  • Pinch of taco seasoning
  • 1 black bean burger, heated and sliced
  • 1/3 cup red bell peppers, sliced
  • 1/4 cup yellow onion, sliced
  • 1/3 cup salsa, divided
  • 1/4 cup black beans
  • 1/4 of one avocado
  • 2 tablespoons sliced olives
  • 1/4 cup vegan shredded cheese (optional)1 tomato, chopped
  • Cilantro for garnish


  1. Preheat oven to 400°F. Remove stems from cauliflower and chop florets slightly. Place into a food processor and “rice” until it resembles short-grain rice. Lay cauliflower on a nonstick baking sheet and sprinkle with salt and taco seasoning. Bake for 20 minutes.
  2. Coat a sauté pan with cooking spray and add the bell pepper and onion. Cook over medium heat until soft and caramelized (about 5 minutes).
  3. Mix half of the salsa and beans together.
  4. Assemble bowl by adding the cauli-rice, black bean burger, sautéed vegetables and bean mixture. Decorate with avocado, olives, cheese, tomato and cilantro. Top with remaining salsa, and serve.

    I just did this one for my family and it was a great sucess!
    I used red beans instead of black ones and added them to the bell peppers and it worked out quite well 🙂

    Hello Cassey! I’m super excited because you will be coming to Singapore next sunday!

    I really love bread especially those with sweet fillings such as red bean. However, they are actually very high in calories and I feel that they are making me gain weight despite working out. I am on Pitt 28 1.0 now!

    Will really love to see how my all time favorite food can be a less guilty food for me.

    Hey Cassey, I am so glad you are making vegan recipes now. I know the whole freelee controversy may not be your favorite subject, but I really look up to you and would love it if you commit to veganism. When I first watched the video, I thought it was very critical, but after opening my eyes to animal cruelty and how unhealthy animal products are for the body, I love freelee and realize the point she was trying to make. Honestly, I had limited my calories so much while following you and became very underweight (which i know wasnt your intention) and it wasn’t until I found freelee and veganism a little over a month ago that I realized I can now eat as much as I want and will not have to worry about getting fat. After extensive research, I believe the vegan lifestyle to be the healthiest on the planet and does not cause eating disorders like calorie restricting and other diets.

  14. I actually used to work at Chipotle and all of their ingredients are homemade and easy to make. This is a much lower calorie version of what you’d get there!

    Hey Cassey! I wasn’t sure where to post this question, but I guess this is as good a place as any. Would you make a video dedicated to tips on how to gain healthy weight? There isn’t nearly as much education on this topic compared to education on how to lose weight. I am struggling to put on weight. I have a very fast metabolism, plus I am very active and get full very quickly. I also recently got over a period of anorexia and have gone down two sizes. I am happy to say that this period is over, and now I am trying to properly educate myself in having a real healthy lifestyle– but my body just doesn’t seem to know how to bounce back! Your videos are always full of very helpful instruction– Please consider my request! I know that I am not the only one who will find a video like this helpful. Lots of love!! <3

      thats a good idea actually. but in case cassey never gets around to it, I’m sure there are videos out there that make such a thing. Won’t be as good as anything cassey makes haha, but its worth a try to explore 🙂
