Flourless Pizza Recipe – first episode of Cheap Clean Eats!
Some of you may remember that a few months ago I said I wanted to do a new cooking show that was focused on showing you how to eat clean on a budget. Well my loves, I finally did it!!
Presenting the world premier of the first ever Cheap Clean Eats episode! Today we are making one of the world’s FAVORITE food…PIZZA!!!
If you thought you could never have pizza while eating clean, there’s hope. In today’s recipe, I show you how to make a flourless pizza with no gluten and no refined carbs! Sound too good to be true? Nope!! Look:
RECIPE for 1 medium pizza (8 slices):
Crust:
– 1 cup of shredded cauliflower or 1/3 of a head of cauliflower…60 cents
– 1/2-3/4 cup of shredded mozzarella cheese…$1.30
– 1 egg…15 cents
– 1 tsp dried oregano…1 cent
– 1/2 tsp crushed garlic…10 cents
Toppings (up to you but I did a veggie medley):
– 1/2 cup pizza sauce…60 cents
– 1/2 cup mushrooms…60 cents
– 1/2 green bell pepper…35 cents
– 1/2 red onion…55 cents
WHOLE PIZZA = $4.26
1 SLICE = 53 cents
DIRECTIONS:
1. Shred cauliflower in a food processor
2. Microwave in a bowl for 8 min
3. Mix in about 1/2 cup of cheese, save rest for topping
4. Crack the egg and mix all ingredients together
5. Spray pan with PAM and make a nice base of cauli-cheese crust
6. Bake in oven for 10-15 min at 350F
7. Then take out crust, top with sauce and toppings
8. Place back in oven for another 10-15 min
Whoa! Crazy amazing right? I know, I know. I couldn’t believe it when I first made this either. The crust actually sticks and it gets crunchy if you put it long enough!

Made this pizza, was so good and filling.
tried this pizza…I made the extra step of sifting my ‘dough’ because it was really (really) wet.
And it was delicious!! I was totally full after half a pizza. Yum!

i tried this pizza and failed. the crust was too mushy and the pizza just wasnt stable. still looks yummy though but i guess i’ll just have to eat it with a fork

I made this and it was ABSOLUTELY DELICIOUS!!! The crust looks kind of mushy when you mix it but you have to keep going because once you cook it it has the perfect crunch and tastes SO GOOD!!! Thanks cassey!!
this is the worst recipe in the world !!!! the crust looked like oatmeal and was mush…. Disgusting!! I could not eat it. it was a waste of money and time. this so called pizza is good for old people who don’t have teeth and like oatmeal. HORRIBLE!!!
It worked perfectly fine for me. Maybe you didn’t bake your crust long enough as there is a lot of liquid in cauliflower. I bake mine on foil paper then once the top is dry enough i flip it onto a vented pizza pan, so the heat can get to the base. Hope this helps! Its delicious when done correctly.
I wish this disturbance cauliflower. With my thyroid problem I try to avoid goitrogens.

I actually like this recipe better than regular pizza. You get all the great taste, a couple servings of vegetables, and no greasy yucky feeling after you’ve eaten it.
I just tried it out today and OMG it’s literally delicious! This really opened my eyes on how eating healthy doesn’t just mean eating salads all the time! The only downside is that the crust doesn’t hold up, so I have to eat it with a fork. But, either way it’s still gonna end up in my mouth lol.. I seriously can’t wait to try all the recipes on here :))

I’d say four make a slim serving, but a normal serving could be a whole pizza

substitute nutritional yeast for the cheese but it may not hold together – use a fork and plate 🙂
I just made this exactly as the recipe said only thing I did different was I added some turkey pepperoni and a little more cheese on top. Overall delicious pizza!! crust has a ton of flavor and the pepperoni i added really was a nice touch!!
There are some downsides though:
-you really have to stretch out the cauliflower mix to get a good size pizza
-the crust doesn’t stay together AT ALL (and I even cooked it longer), definitely needs a fork
-the veggies to crust size ratio is way off, too many veggies for amount of crust (had to cook it for extra 10 minutes to cook the veggies better, and broiled for 2 mins more)
other than that if you’re willing to eat it with a fork then it’s delicious!! even with an extra 1/4 cup of cheese on top and 1 ounce of turkey pepperoni its still only 300 calories for half of the pizza! =)

I just made this and it was perfection! I added garlic powder, salt and pepper, and oregano to the cauliflower with the cheese and when I added my egg white it turned runny
is this very sodium packed? i’m not sure if tomato paste is healthy… i’ve tried making the oat pizza and it turned out gross. does anyone have any tips on how i can make this pizza tasty?

Just made this! Delicious! Only problem I had was with the crust. I baked it for 20mins and it still wouldn’t hold. I ended up eating it with a fork. Thank you for the recipe Cassey
I used about 1 1/2 cup cauliflower (cooked for 8 min) and fat free mozzarella, baked for 15 minutes and held together perfectly
I made this tonight and I used a cheap pan and i didnt use enough PAM so mine stuck to the pan but who can beat cheese and sauce… hello!!!
Just made this, 8 min for the cauliflower in the microwave was too long, it burned, but I cut the time to 4 min, it worked. I liked the taste is soo many calories less than traditional pizza is great. The crust was not too firm, but I used fork and knife problem solved. Thank you Casey you are very creative with your recipes
If you put it in the oven for longer the crust will be hard. I added ripe plantine to mine which made the crust harder and sweeter.
I made this tonight and my crust was soggy too! I will try wringing it out next time, but Cassey’s turned out fine and she didn’t have to do that! I was sad. 😀

I just made this and it was AMAZING but i didnt have enough cauliflower so i added some broccoli and it worked just fine. its so yummy thank you!!!!!!
Gah! No idea what I did wrong. I did everything according to instructions, put a super thin layer of sauce on and had to cook this with a toddler screaming at me. I did all of this and now the “pizza” is just a mushy mess. The crust is not holding together at all. So much effort for a thing I’m not even sure I can eat now. So confused!
I made this with my sister, and while the taste was AMAZING the crust was still pretty soggy… we are eating the leftovers for lunch tomorrow, and we found that cooking (already cooked in the oven) pieces over med-low heat in a saucepan on the stove definitely helps firm up the crust! Hope this helps 🙂 I think the trick might be to squeeze the water out of the cauliflower though. Going to try that next time

Made this for lunch today, and the flavor was soo good! The crust didn’t turn out crispy, though, I’m assuming it’s because my sauce was really runny (I had to take frozen sauce out of the freezer and thaw it)
Shared it with my sister and my mom, and I think they liked it, too 🙂
Do you guys think it’s possible to substitute the egg for sweet potato or tofu to make the crust?? (Wondering if it would bind the crust more)
Tried this last night and it was extremely delish!
When I added the eggs it got TOO WET so I squeezed out the mix with my hands before putting on the tray. If I had cheese cloth that would have been even better! It turned out great; crust held together really well and even got crispy like pizza dough 😀 Yummmmmm!!! Gonna try this out with tons of different topping combos.

I did that and it says it’s only 48 calories per slice but in the video Cassey says it should be 77 cal/slice….??? which one would you go by?
Maybe you used a different cheese? Or different sauce with fewer calories??

You can heat it in the oven after it is “riced” at 375 for about 15 minutes. 😀

What is your opinion about konjac flour?
Yum! I just made this for lunch with spinach, garlic, and tomatoes as toppings, and it was delicious! I cooked my crust by itself a little longer until it was as crispy as I wanted. And next time I’ll add more cauliflower because my crust was a little eggy; I don’t think I added enough this time around.
I made this for dinner and LOVED it. I think next time I’ll use a little less cheese.
Have any of you perfected the crust? I have made it twice– the first time it was too soft and I couldn’t pick it up. The second time I spread it thinner, thinking I made it too thick the first time, and it burned and got reeeeaaaaally stuck. Its yummy, so I am trying again tonight.
I forgot to spray pam!!! I realized after the first bake for just the crust. Oh well, it’s out in 5 mins. Also i found that 1cup wasn’t enough so i used 2 cups for cauliflower. Might be because i used a magic bullet and it didn’t shred properly but it smells good! thanks 🙂

I had to put the 1 cup of shredded cauliflower in the microwave for 4 minutes because when I tried it for 8 minutes it burned the cauliflower:( My dough turned yellow and soupy when I added my 1 egg!!! Its in the oven as I type, still going to try it…
Try wringing the cauliflower out in cheese cloth to remove some moisture. I’m trying this tonight and another website had squeezing the liquid out of the cauliflower in cheese cloth before adding the other ingredients. 😀
What the heck. When I added the egg, it made everything into soup! I tried it twice. ANd now I have no more cauliflower to try again.

Whoops, I put only a cup of raw shredded cauli in the microwave and it quickly burnt to a crisp. Next time, I will need to put more cauliflower in the bowl I think. I’ll try again in a few days 🙂

Hey Cassey! I loved the flourless pizza! Delicious! My husband mostly eats paleo, so I was excited to make a pizza he would actually eat! One question though, my cauliflower crust was too soft…we couldn’t pick up the slices. I thought I should bake it longer (the first time), but it was already browning and I didn’t want to burn it. Any suggestions for next time I try it?
With a cheese cloth squeeze out any excess waters before you add in any cheese or egg.
WOW. I’m stunned. this turned out amazing! I used enoki mushrooms and made avocado sauce. Added some leftover chicken breast that I had as well.

I use hummus as my “sauce” and top with sautéed onions, peppers, spinach and mushrooms. To die for!!!!!

I’ve been meaning to do this for aaaaages and finally did it today (just finished it between just me and my bf!). I topped mine with chickpeas, kale and squash and made my own sauce. Definitely making it again!

This was my first time making this and both myself and my parents were surprised how tastey it was… I did have to use the whole cauliflower though because I felt it was too small, and I had to add a little bit of ham since my family refused to eat a meatless pizza lol.. I found the crust to be really soft which was fine with a fork BUT I realized later I completely forgot to add the egg *derp* so that’s probally why it was sorta falling apart

What’s an alternative to cauliflower if it isn’t available where you are?
I know potato pizza crust exists but you usually have to add flour. Most of the ones that I’ve seen have used non-traditional flours like almond and rice. It really depends on where you are and what exactly you have available. Maybe try to find a veggie that has a texture similar to cauliflower when chopped very finely.
You will definitely have to experiment. But if it doesn’t work out or it seems like too much, just skip this recipe.
Is there an alternative to steaming the cauliflower if you do not have a microwave?
Use a steam basket over the stove but add an additional layer of cheesecloth to line the steam basket so that the cauliflower doesn’t fall through the basket. Also make sure that the cloth does not hang over the edge of the pot so that it doesn’t catch on fire from the stove’s burner.

Followed all directions and add some of my own toppings. Absolutely delicious. But the crust was very soft and stuck to the pan. Definitely can’t eat it with your hands but plate and fork will do for something so delicious. Next time I will add 1Tbsp of coconut flour to dough. Also will cook it on parchment paper.

I am a swedish 18 y/o girl. I made this pizza for my family, actually it’s in the oven right now, and had really fun doing it.
I did my own home made tomato sauce with 1 tomato, garlic, oregano, salt and pepper by taste. Boiled it up with some potato flour for good consistansy.
I topped mine with red peppers, leek, fesh basil and tones of ruccola. Enjoying the lovely smell coming from the oven right now! Can’t wait to try it!

For those of you having issues with your crust coming out like a scrambled egg, wait a few minutes after you pull the bowl out of the microwave to add the egg. You must let the cauliflower cool down, otherwise when you add the egg to such high heat it scrambles.
*Microwave cailiflower in a glass bowl
*I used 1 entire head of cauliflower (about 5 cups grated) and 4 eggs to make 1 large-ish pizza (enough for 2, and leftovers)
*I added garlic powder & italian seasoning to crust (after microwaving & adding eggs)
*Toppings I used: red onion, ground turkey, jalapenos, & spinach
* For the final time it is in the oven with the toppings, I left in oven for about 20 minutes, & turned the broiler on low for about 2 minutes.
*Pizza came out perfect

This doesn’t include the energy costs of the microwave and oven, nor doe it include the cost of PAM! Bad math!
Come on, no recipe includes those costs, most of which are negligible.
I don’t know what happened exactly, but my base turned out more like an omelette than something crispy. It does taste good though!

I tried this recipe twice, and somehow the cauliflower just didn’t come out like how it was supposed to 🙁 it was still mushy even after baking it, so i couldn’t slice it like a normal pizza! But it tasted like pizza that’s for sure lol I’m going to have to experiment with the tomato sauce, because I think the one I used was too watery so it seeped into the cauliflower dough :\ but it was delicious nonetheless ^-^ Thanks Cassey!

And I finally did it! The only thing is that I don’t have an oven so I just used the microwave and it was successful. I am so happy right now. It tasted so good and everyone in my family loved it. I feel like I became a chef or something. lol It really is a healthy pizza with much lower calories. YAY!

My family are not supportive about my diet I end up eating greasy non healthy foods. I try to make my own dinner but I don’t seem to have enough ingredients all I have that is healthy is bananas, kiwis, mangoes, strawberries, and lettuce. I can make myself a fruit salad but I don’t want to eat this every day as my dinner.
I don’t have a food processor…is there any other way to get the cauliflower all shredded?
You can either use a blender, or you can shred it with a cheese shredder or any kind of shredder! Or you can even just cut all up into tiny morsels, but that would probably be very time consuming.

Mine turned out very good. The crust never got hard like pizza crust but I used more ingredients didn’t up the cooking time. I think if I would’ve used the amount of cauliflower she did or cooked it longer it would’ve been perfect. Still turned out yummy anyways though!
I had great success with my pizza. I followed the recipe almost exactly, but instead of using the microwave, I used the oven. I have my own personal views on the microwave, plus I think it’s a lot easier to control the burning of the food. I baked mine in the oven at 350, for 10-12 minutes

So I tried this recipe after having great success with the crepes recipe! (thank you Cassey!)
Unfort, this one didn’t turn out as well :(.
I cut 1/3 of cauliflower, shredded it in a blender (don’t have food processor), and then microwaved for 8 minutes. But after 4 minutes in the micro, the cauliflower burned and my bowl cracked. 🙁
I tried another batch again, this time with only 3 minutes in the micro. Afterwards, I mixed it with finely shredded cheese and it didn’t yield hardly anything so I had to add more cauliflower. Finally, it seemed I had decent amount of cauliflower for a crust.
When I put the egg in the mixture, it turned somewhat runny, but overtime, it coalesed. Then I spreaded the crust mixture over the pan.
After 10 minutes in the oven, the edges browned, but the inside remained doughy and didn’t rise like in the video even after 20-30 minutes in the oven.
Not sure if I will try this recipe again.
Any help here on what I could do differently next time?
I had a problem too. when I baked it it was more like a baked scrambled egg. not like pizza at all. maybe Ididnt use enough cauliflower but there was no way I could cut in into slices and eat it like a pizza
I tried steaming the cauliflower for 8 minutes instead of microwaving it – and I found that it worked perfectly. If you’re worried about the cauliflower not cooking enough, also try leaving it in the over a few minutes longer, or steaming it longer
I had issues as well with the Califlower. I use 1 cup and that was even more than 1/3 head of Califlower. I cooked it in the microwave, but I felt that it dehydrated the cauliflower. I definitely did not make a medium size pizza. It was more 2-4 small slices.
Hi ! 🙂 Does anyone know with what substitute the calliflower to have another type of flourless pizza ? I can’t eat calliflower (not because of a diet. I physically can’t, I always end up throwing up no matter how cooked it is >_<)

Hiya! Is there any good substitutions for the mozzarella in the base? I am on a certain diet that really minimises the amount of cheese I can have!
mozzarella isn’t bad for you, I’m also on a diet but I can’t have any flour at all. But my doctor did tell me mozzarella is one of the good cheeses for you to eat. She also said mozzarella sticks is a healthy snake depending on where you get them from or if you make it homemade.
Daiya shredded soy cheese is really good, It melts and tastes just like Mozzarella but dairy free and made from soy. You can purchase it at Whole foods. Usually located in the produce aisle in the Vegan section.
Daiya is soy free. whole foods also has almond and rice cheese

Did anyone else’s cauliflower burn and shrink in the microwave? I’m new to cauliflower so any tips or tricks would be appreciated! Out of curiosity, I tried the burnt stuff to see what I was getting myself into and it was pretty good so I can only imagine how good the pizza is!
Mine did not burn. Check the power on your microwave. maybe you need less time or less power
maybe you should ajust the frequence of your microwave. maybe it’s too intense.. or you can just steam it during 4 min., give it a stur, and steam it for another 4 min. 😉
My cauliflour did the same thing, so I figured I’d microwave it less and give it breaks between the 8 minutes. It didn’t burn too bad! Pizza in the oven as I speak! 😀
Can someone please tell me how much grams is 1 cup? I tried to google it, but there is more then one posibility… so confused right now!

The best part of this is that it’s actually a lot easier to make than an “ordinary” pizza. I mean, the normal pizza crust takes time and nerves, this took me about two minutes of active cooking! Thank you Cassey for your awesome tips and motivating attitude!
Any suggestions for an egg substitution?
There are many alternatives but a good place to start is using flax seed, specifically one of the best for baking. 1 T to 3 T (ground flax to liquid) or 1 T to 4 T (whole flax seed to liquid), stir until gelatinous. [This can be heated.] For others try this link:

• 1 egg = 1/4 cup mashed potatoes
• 1 egg = 1/4 cup canned pumpkin or squash

• 1 egg white = 1 Tbsp. plain agar powder dissolved in 1 Tbsp. water, whipped, chilled, and whipped again

I had problems with a soggy crust! I baked it longer and at a higher temperature than the recipe called for, but it still came out soggy! I’ll have to try it again and play around with it to see if I can get it to taste like a pizza.
Maria, I think the steaming might not be taking care of all the excess water in your cauliflower. i tried the pizza tonight and it turned out great though no on in my family actually ate it and the smell coming from the microwave was a little scary. My sister said the crust tasted like soup hahah. I just want to ask you how to cook the middle without burning the edges. The pizza was a little crumbly in the middle but I didn’t want to leave it in the oven because the edges were black. I tried turning on the top part of the oven in the second part of the cooking and it was better. Any advice?

Im pretty sure you should leave it a bit more whole and try to steam it over boiling water…then chop it. I could be wrong…but the microwave is serving to steam it.

Tried your recipe tonight Cassie for me and two friends! It was amazing and so tasty! I added coconut flour to the cauliflower mix though and used my mixer to mix it for a stronger consistency. Then I added veggies, chicken breast, and cheese. It tasted so good, thanks for sharing!

This pizza was amazing!! I loved it and so did my boyfriend. I added a ton more cheese to his and didn’t add mushrooms but I did my side to recipe and it was fabulous!! (a little too squishy) but I think it was because I just got a new food processor and got overly excited when shredding the cauliflower. lol
mmmm my twin and i JUST made this and we are eating up the deliciousness while i speak! 🙂 kinda fell apart for out first time, but we will definately make it again soon!

I’ve never posted a comment before, but I HAD to this time, b/c this pizza was UNREAL – it was SO SO good. My children (ages 3 and 1) couldn’t get enough. I think I am making it again tomorrow night with all the leftover cauliflower! Your directions were easy to follow, and it really did taste like regular pizza. I made the mistake of baking mine on foil b/c I didn’t really have a pizza stone, and it was a disaster trying to peel it off, BUT, I found my pizza stone tucked away and I can’t wait to try it again!

So I didn’t have any cheese so I that meh i’m sure it won’t make to much different…but i added a spoon of cottage cheese to the base instead…I think proper cheese is vital for it to bind!!…i had to sort of eat it out the pan with a spoon because it was more couscous-y than pizza base-y but oh well, it was delicious still. And I still have half a cauliflower left to try it again with!

Eating clean means to eat whole, nutritious, unprocessed foods that are good for your body. This means cutting out anything fried and sugary. Also cut out any refined carbs like white breads, regular pasta and white rice. Stay AWAY from soda and be careful with fruit juices. They contain a lot of sugar. Instead opt for steamed veggies, whole grains, lean meats like chicken breast, and lots of water. You can find what clean foods I recommend eating under Cassey’s Corner in “My Grocery Shopping List”.

Ok, I love the flavor, but what the heck am I doing wrong?! I have made this a number of times and it always comes out to soft and moist. I squeeze a whole cauliflower into 1 cup after all the steps…don’t know how I could get anymore water out of it. We end up just peeling it off the parchment paper and eating it in pieces. I didn’t see anyone else with problems?! Help!!!

Made the mistake of using 1 cup of cauliflower before microwaved. It shrunk- so I doubled it (maybe compressed in a cup is 1 cup?)
And I had banana pancakes for breakfast, mmm. I always play the guess game as my family never believe what the ingredients really are!

I made this last night and it was ah-mazing! It was sooo good, i made 2 more crusts and brought them to work for my co-worker and I for lunch. I wanted to impress her 😉 But really easy to make and the taste is outta this world. My very picky almost 7 year old loved this recipe too!
The only thing i would add is, i did bake my crusts for 18 minutes. Even at 15 minutes, it still was a little soft. Dont be afraid to keep baking it until its more brown on top, it wont burn.

Anyone know of an alternative to the food processor? By I don’t have one and don’t want to buy one since the only thing I’ll probably make is the pizza, plus a processor is not so easy on the wallet 🙁
I think you might try to just chop it up – patiently, bit by bit (using a third of the whole cauliflower and cutting it into bits first, then chopping it). Might count as a triceps workout aswell 🙂
You could microwave it for longer in bigger chunks and mash it when cooked?

I have to admit I thought this pizza was going to taste yucky and I was going to not make it but I changed my mind (I have such bad experiences with cauliflower recipes ). So anyway I made it and it is so AMAZING you can’t even tell there is cauliflower even in it! So good!! I am going to try to not eat the whole pizza. If I do at least I don’t have to feel so bad!

I’m pretty sure it’s 60 cents for 1/3 of it, or 1 cup of shredded. She divided the prices of the whole based on what was used in the recipe.

So I just made this and it was delicious! The only big problem was that the crust completely stuck to the pan and was a bit soft. What do you think went wrong? Any suggestions guys on how to make it drier? It was still awesome tasting, we just had to eat it out of the pan lol!

I don’t have a microwave either b/c I think they are so unhealthy for your foods….basically you can substitue what she did by simply putting it in a steamer pot or just a plain pot with a tiny amount of water to soften up the cauliflower (it shouldn’t take long, but I also have to try the recipe first 😉 ). I’m so glad there are other people out there who don’t believe in the “power” of microwaves.

(I even made the pizza sauce by hand from ingredients I got at the local farmer’s market here in Santiago, Chile!) It was absolutely delicious! I wonder if the crust will turn out ok if I use a baking egg substitute and a cheese substitute. (I’m vegan.) There’s only one way to know for sure… Next time I hit up the grocery store, I’m grabbing the stuff to make this!
i use blended silken tofu for the egg replacement and diaya cheese, turns out wonderfully for me.

Just made this for lunch… it is absolutely DELICIOUS! 😀 I was super skeptical about the cauliflower crust… but became pleasantly surprised at how amazing it tasted! The only thing I should’ve done was make it a little thicker (it kept falling apart, haha) … but practice makes perfect!

The pizza looks really tasty!! I never thought you could use a coulyflower as crust. I’m not very good at cooking, so I had some questions. I don’t think we have shredded mozarella here, would it also work with mozarella shaped like a block? And what exactly is pam? I tried to look it up, but it just says it doesn’t leave residue. Please look into this, and you will see, she was the creator of this recipe in her own kitchen, four years ago. Nearly word for word, your recipe is the same. I cannot link this, but please google cauliflower pizza crust, the lighter side, and it will come up.
Hi Taylor, no I did not copy her recipe and have not seen that blog. The cauliflower crust or paleo pizza recipes are all over the internet and there are a million variations of it but the base is always the same. Thank you for understanding!

What about a clean eating vegetarian spaghetti Bolognese next? I would put some beans in the sauce for protein… Just remember to eat more of the sauce than of the pasta and it is still healthy.
