Carrot Cake in a Mug! Quick healthy dessert!

 

 

Hey hey my dear POPsters!!!

It’s Thursday! And you know what that means. You have to do a POP HIIT. I mean, wait. That was so not dramatic enough. You have to conquer the HARDEST POP HIIT AND CRAZIEST MOST DIFFICULT WORKOUT OF YOUR LIFE! The reviews for I Knew You Were Trouble POP HIIT 8 are insane. Those who finished nearly died. Including me. Read the comments here.

But life gets sweeter! I planned it all out. When you finish that workout, you can have this carrot cake! The fastest easiest healthiest carrot cake ever. You ready? Here’s what you’ll need:

Ingredients for cake: (1 serving)

– 1 egg

– 2 TBS banana mash

– 1 baby carrot

– 2 TBS almond flour

– 2/3 TBS stevia

– 1 TBS greek yogurt

– 1 tsp pumpkin pie spice

– little pinch of baking powder

Ingredients for cream cheese frosting: (more than 1 serving)

– 1/8 cup tofu

– 1/4 cup tofutti cream cheese

– 1/4 tsp vanilla extract

– 1 tsp stevia

Directions:

Mix all cake ingredients in a mug! Microwave for 1-2 min depending on how hot your microwave gets. If you’re against microwaves you can also make this at 350F for 7-10 min. Just watch it in either case.

Then take out and chill in freezer while you make the frosting.

Blend all of the frosting ingredients together until smooth.

Then slice cake in half, add frosting inside, on top, and add extra carrot shreds, walnuts, and cinnamon to garnish!

Whole thing is 200 cals vs a “real” slice of carrot cake at 400 cals.

I am so happy that you guys really like the Cheap Clean Eats series!     OH MY GOODNESS!!!! I just tried this tonight, and they were AMAZING! I even skipped on the sugar and icing. Literally, I just put eggs, banana, carrot, almond flour (I just threw sliced almonds in a food processor!), greek yogurt, pumpkin pie spice and baking power! Seriously, even without the sugar and icing, this was GREAT! I needed a carb free after gym snack (I came home at 9 pm and I really didn’t want to have sugar or carbs) this was PERFECT. I’ve been craving carrot cake, this def meets the cravings! I love you so much for this Cassey!!!!

    I tried this out with ricotta (no fat) instead of greak yogurt and oats instead of almond meal and it tasted great! It didn’t really taste like carrot cake but whatever it was like a nice moist banana cake! i didn’t do icing though because i dont know what the heck toffuti cream cheese is and it was just improvised with stuff i had at home. Anyway, great recipe, Cassey!

    Today, I went to the beachfront with my children.

      If you can’t have lactose maybe coconut milk? Brands such as Thai Kitchen have canned coconut milk that is separated with the cream on top, that may be thick enough to work.

    hey Cassey, could I substitute the almond flour for anything else? my town is a little crappy and my local supermarcket doesn’t sell whole unsalted almonds or almond flour :s

    Oh my god this was so good. Tried it with whole wheat flour and since i didn’t have tofu lying around i had some cream cheese mixed it with a bit of vanilla and a tsp of powder sugar. HMMMMM so good…anyway to make a healthy brownie

    I was famous in high school for my carrot cake but the recipe carries so much sugar and butter that i’ve stopped making it so i LOVED this video! Im gonna definitely try this one as soon as i can get my hand on some of the non-traditional ingredients!

  32. I love this!! We used to make the mug cakes all the time but haven’t for quite awhile because they weren’t very healthy. I love how you “healthified” this. 🙂

    My kids LOVE your videos by the way. They are 2-7yrs old and ask me to put “that exercise lady” on the big TV so they can exercise. They do pretty well following the workouts too. 🙂 I love your upbeat & positive attitude.

    This looks SO good! I’ll be sure to try it out. Such a nice treat after that torturous but fun POP HIIT 8. I accidentally let go of the weight and made a scratch on the floor. Oops!
    For this cheap clean eats, could I use oatmeal instead of almond flour due to allergies?
