HEALTHY WAFFLE HASHBROWNS

Ingredients: 1 parsnip 1 medium red potato, peeled 1 tablespoon Ghee, butter or coconut oil 1 tablespoon liquid egg white Salt & pepper to taste 1 large egg Method:

  1. Heat waffle iron to medium-high.
  2. Grate both the parsnip and potato and measure to equal 2 cups. Squeeze out all moisture using 2 paper towels or a clean dish towel.
  3. Add to a medium bowl, with ghee, egg white and salt and pepper. Stir well.
  4. Spray iron with cooking spray and spoon potato mixture across the top. Close waffle iron and press firmly for one minute.
  5. Cook for 13-15 minutes or until there’s no more steam releasing.
  6. Prepare a small nonstick pan by coating with cooking spray and heating over medium heat. Crack egg and cook sunny side up. Lay on on top of hash browns.

Also, here’s a trick for perfect sunny side up eggs!!

Spray your pan, crack your eggs into it, put 1 ice cube inside then put a lid on top. The steam from the ice cooks the egg. No need to flip it over. No broken yolks.

And here’s a FUN TIP! How to clean your waffle iron easily? Just wet 2 paper towels.  Lay them inside an unplugged,  still-warm waffle iron, and allow the steam to clean it for you. THAZZZZ IT!! If you make any of these recipes, please post a pic and hashtag it #cheapcleaneats! I know you’re gonna have so much fun!love-cassey-transparent-150px

I only saw part of your post before as I was pretty busy, but I remembered the main idea (making foods in a waffle iron) and made french toast in my waffle iron the next morning for breakfast. I think that the waffle iron version of french toast was the best I have EVER had!!! Your ideas are great too-can’t wait to try more!!!

  • […] Waffle Cookies & Grilled Cheese I wasn’t going to bake today. Nope, 10 miles tomorrow and I’m resting up. Not to mention chocolate plaintain cookies, no bake s’mores cookies, no bake granola bars, and plaintain blondies currently reside in my refrigerator. […]

I HATE eggs, but have been trying to hide them in stuff. For the hash browns, do you think it would still work if I put the whole egg in it rather than on top?
