INGREDIENTS (makes about 20 huge meatballs):
- 2.5 lbs ground chicken BREAST
- 3 egg whites
- 1 cup dried quick oats
- 2 medium green bell peppers
- 1 purple onion
- 2 TBS paprika
- 1 TBS chopped garlic
- 1 TBS dried basil
- 1 TBS oregano
- 1-2TBS of fish sauce or you can add flavor with a pinch or two of salt
- (You can basically season it however you want spice wise)
DIRECTIONS:
- Mix all of the ingredients together in a big ole bowl
- Spray a muffin tin (or regular pan) with PAM
- Mush into balls
- Cook at 375F for about 35 min

The recipe makes about 20, so I am saving up for the week. Each ball is under 90 cals and has over 14 g of protein!!!! You should have 2 balls per meal along with your veggies.

These are very delicious! I like how you can put whatever seasonings or meat you want in them. I used ground turkey breast and they turned out great! I think these will be great for me to take on the go for meals. :-) thanks for sharing!
This is a delicious recipe! I made mine a little more Italian flavored by adding some chopped fresh basil to the meat. It turned out awesome! I cant wait to make them again!
These are AMAZING! Nice, light texture and the oats magically disappear. I vary the recipe sometimes and use ground bison, and change up the herbs. Make a batch on Sundays and keep them on hand for easy meals all week. Love these, thanks Cassey!
I used this as a guideline, seeing as how I didnt have an ground chicken. Use lean ground beef instead. Added red bell instead of green. And mint, instead of the oregano & basil. Threw in some chili flakes, salt and pepper. Smells divine. And gonna use them in my mexican soup
I used them on a wrap and took them with me to school!
I make meatballs with half pureed broccoli and caulifor for my toddler to get veggies in him. Make it with ground turkey, too. Has the same flavor and texture as meatballs. In fact, I like it better because it’s a lot lighter.

I just made a few of these meatballs and they are so good! I had to substitute a few key ingredients though but they still turned out great. My grocery store didn’t have any ground chicken so I made them with ground turkey instead and I didn’t have green bell peppers, only sweet peppers so I used those instead too. I don’t know how much it changed nutritionally but I’m sure it’s still pretty healthy. I also ate them with a little bit of spaghetti sauce. So, so good!
Is there something you can sub for the oats to make them gluten free?
I found this recipe via Pinterest this morning and made it for dinner tonight! I took your suggestion of pairing it with spaghetti squash and then added a small bit of spaghetti sauce and a sprinkle of cheese. Yum! Delicious! I can’t wait to eat the leftovers. Thank you!
These were so good! Even my picky hubby scarffed them :). I used a lot more garlic ( we love it!) and subbed the oats for quinoa flakes.
These look great! Can I sub the chicken for ground turkey? Or is that not clean enough? And can I eat these while on the 90 day meal plan?
Made these last night, had to sub bread crumbs for the oats, and they were great! I’m not sure how much that changed the calorie content but I will make them again for sure, next time according to the recipe. I do think the oregano was a bit much though so I will cut back on that. Served them with whole wheat penne pasta and homemade marinara. Yummo!! Thanks Cassey!
