Healthy Ice Cream Sandwich Recipe

 

 

Hey POPsters!!

Ah, the second Cheap Clean Eats episode is here! This weekend when my sister visited, we headed over to Diddy Riese by UCLA to share an ice cream cookie sandwich. We got 2 cinnamon sugar cookies with strawberry cheesecake ice cream inside. It was super yum and was also part of her graduation food fest extravaganza! You know, even though eating out can really add up, it inspires my creativity in the kitchen. I love cookie sandwiches so I just HAD TO find a way to healthify this dessert!

Luckily…you know, and I know how to make healthy cookies…and healthy ice cream already.

So this one was a piece of cake!

INGREDIENTS:

– 2 ripe bananas

– 1 cup of rolled oats (dry)

DIRECTIONS:

1. Dice banana into coins and freeze for a few hours or overnight

2. Place dried oats into a food processor and grind into oat flour

3. Pour oat flour into a bowl and mash with other banana with hands until a dough forms

4. Make 4 cookies and place in oven for 15 min at 350F

5. Cool cookies

6. Take frozen banana coins and put them into the food processor and blend for 1-2 min until it forms a cream! (It’s like magic!)

7. Scoop ice cream onto cookie, sandwich it…

8.  AND EAT!!!!!

OMG!!!

A regular Diddy Riese oatmeal cookie is 195 cals each. A whole sandwich with vanilla ice cream is 560 cals. Our Blogilates Ice Cream Sandwich is only 260 cals! That’s like half!! Now let’s talk about price. I bought my sandwich for $1.75 which is still a great price. But this baby is a winner on the Cheap Clean Eats list…look:

Bananas: 2 at 19 cents each = 38 cents

1 cup dried oats = 60 cents

TOTAL: 98 cents for 2 ice cream cookie sandwiches! That’s 49 cents each!!

CRAZY!!!

    I tried this and it didn’t work out so well. I’ve made the banana ice cream before, but it was a runny brown mess this time, even after being in the freezer again for 45 minutes. I also didn’t have regular oatmeal, so I used Quaker Oats Maple & Brown Sugar. I used three packets (1 1/2 cups) because before the mixture was too runny. I just threw it away. 🙁

    Hai Cassey!!
    Just made mine, they’re in the oven, but they look very thick, and wide 🙁 Is this meant to happen?? It was really hard to even make a ball out of the dough, and I’m worried that they’re gonna come out horrible. Also, if I don’t like peanut butter, what should I replace it with?? Tried yoghurt, but it tasted horrible :'( I’m not a very good cook…. xoxo

      I was hoping there was an alternative too! I’m allergic to banana so I can’t try many of her recipes even though they look so tasty!

    Super healthy and clean! Although these were delicious, they didn’t taste like a normal, unhealthy ice cream sandwich so if you are looking for an unhealthy tasting ice cream sandwhich, this is not the recipe for you. It tasted amazing for a health food though!

    Made it! Only, I added some raisins to the cookie dough and made two flavours of icecream by adding a little cacao powder to half of the banana ice cream (I know, it is cheating, but not too bad).

    My boyfriend was really happy with me, as we agreed on one week of no sugar / sweets/ snacks allowed just yesterday and he loves his evening snack 🙂 So I made him this instead. Just as good or maybe even better than the ice cream and cookies from the factory and really no work at all. Thank you, Cassey!

      You could probably use a flax egg for the cookies, and just switch the banana for another fruit for the ice cream 🙂

      Actually any frozen fruit would work, but maybe add a little almond milk or greek yogurt to it. Banana’s just work best because they already have that ‘creamy’ texture to them.

    Huge hit Cassey with my kids! They usually like ‘store’ purchase icecream bars, but when they tried these they wanted seconds. I was not so sure how ripe the banana’s should be, so was lucky to pick some with just a few black spots. Thanks so much for this recipe, it’s a hit with my family. 🙂

    Question: can this recipe be done sans-food processor? Could I use a magic bullet blender instead?
