Coconut Fried Almond Crusted Banana Bites! + Winners!

Hey POPsters!!!

I decided to get super creative with my food today and made an awesome new appetizer or healthy desserty type thing! Check out those things up there that look like chicken nuggets! Those are actually sliced bananas, covered in almond flour, and pan fried in coconut oil! They were so good, easy, and delish…I encourage you to give it a shot.

Here are the directions:

1. Slice banana into thin coins. I probably got about 25-20 pcs out of my banana.

2. Then fill 1 bowl with an egg that is stirred up so yolk and whites mesh

3. Fill another bowl with almond flour. If you don’t have this, you can buy almonds and crush them yourself in a blender!

4. Dip the banana coins in the egg mixture and then coat it with a layer of almond flour.

5. Then place the coated coin in a pan that’s on medium heat that has some melted coconut oil.

6. Flip, flip, bam, done, eat!

I also FINALLY got a chance to try doing ombre nails today! They turned out very nice. Thanks to Instagram for constantly clogging my feed (well I voluntarily signed up so I can’t complain) with beautiful nail pics!! Inspired. Next time…I am trying 3 colors! What color combos do you wanna see me try?

    I can’t wait to try the banana bites. I love your recipes, my 6 yr son eats all of it. I love orange, so I think silver with orange tips would look good.

    Those banana bites look really good! Can you make them vegan (I’m not vegan, but I’m trying to use less animal products)?
    I would love to see you do sunset nails! It’s pink and yellow, and it looks like a sunset (obviously, since that’s what it’s called, lol). If you want a picture, you can search ”sunset nails” on Pinterest. I think the colors would look really good on you 🙂

      You can try making a flax egg… it’s 1 Tablespoon ground flax + 3 Tablespoons water.. mix up with a whisk or fork, refrigerate it for 15 minutes and then it’ll transform into a gooey binder for the almond flour and the banana…

      It’s recommended to buy the flax seeds whole and grind them yourself (better for you that way) but you they are available for purchase already ground up… that’s the best vegan “egg” replacer out there, and flax is good for you 🙂

    Sooo going to have to try the new recipe!!! I’ve been making the banana oatmeal cookies at least 2x a week, I LOVE THEM!!! You should come up with a good apple recipe too! Also wanted to see if you thought it was a ok to do your workouts mon-sat and also crossfit 3x a week or if it may be too much? Thanks!

Korea and one of my biggest concerns upon moving was where and how was I going to work out. I decided that my new living room would have to do and then the next goal was to stay motivated to do so.
