Healthy Sweet Potato Zucchini Latkes!

Nope it’s not an oxymoron!

Happy Healthy Hannukah!

Last night, I decided to be in the holiday spirit and make one of my fave December foods! Latkes! They are basically like hashbrowns, which are basically like french fries, which basically means they taste amazing and are not healthy for you when consumed in generous amounts!

So what do I decide to do?

Make a healthy version!

DURRR!!!

So here’s the recipe I came up with inspired by the Atkin’s version of a latke:

INGREDIENTS:

  • 2 whole eggs
  • 2 small zucchinis (peeled and grated)
  • 1 medium sweet potato (peeled and grated)
  • 1/2 onion (chopped)
  • Coconut oil or PAM

DIRECTIONS:

  1. Peel the zucchini and sweet potato, then grate them. I used a cheese grater thing.
  2. Chop your onion.
  3. Then place all that in a huge bowl and crack 2 eggs over it.
  4. Stir it all together.
  5. Set your pan to medium high heat and grease with coconut oil.
  6. Splat the mixture on the pan.
  7. Flip when one side is crispy golden brown.
  8. EAT!

These were so delish! First I subbed nonfat plain greek yogurt for sour cream! Then I went crazy and tried it with sriracha. To tell you the truth, I liked that best.

Hope you’re having fun this December. For those of you in school, you must be going through Hell Week right now. Study hard and don’t eat junk food! That’s why you break out! Bad food, no exercise, and stress! Make sure you sleep too.

Well, I say that but I was pretty bad during finals week and Hell Week too. All nighters were common. Well actually, they still occur and I graduated 3 years ago!

    Hi Cassey! I am a new POPster. I just made these latkes tonight and they were SO GOOD. I had mine with a little greek yogurt but like you said the Srircha was the best! It was fire! So good, my kids had theirs with applesauce. It was a big hit and I know this will become a staple in my recipe book. Very easy recipe 🙂 All I added was a little bit of seasoning salt and pepper to taste. Very GOOD!

    Just finished making these – they are AMAZING! I’ve tried quite a few of your recipes and loved them all, but this is great and so simple. I added a little garlic and pepper and I even ate it with BOTH the nonfat plain greek yogurt and sriracha and it’s definitely yummy! Always had sriracha in the house but haven’t “appreciated” it as much until I started following you a few months ago 🙂 Thanks for everything – you.are.amazing!

    Yayy!! I was going to ask you for a healthier take on the latke. My family made some last night, out of tradition. We ate one then felt disgusting because of the frying that was done.
