Hey guys!

It’s the day after Thanksgiving and even though I looooooove a good feast, nothing feels better than coming back into my regular food routine. I’ll probably be eating some of these leftovers for the next 5 days (let’s be real here) but doesn’t mean that every single meal needs to be a remix of turkey, gravy, and mashed potatoes 😂

If you wanna start off the day right with some yummy, healthy, and pretty pancakes, this recipe is for you! Plus, if you’re still in the mood to impress your fam with your cooking skills, this easy recipe will definitely make them ooooh and ahhhhh!

Everything in this pancake recipe is pretty standard, but there is one ingredient that you might have to source ahead of time. It is… Pitaya powder!

Okay to be honest, I had noooo idea that they made pitaya in powder form! In its natural form, pitaya is a fruit that is also known as Dragon Fruit. It’s a superfood that was indigenous to Central and South America. Now it’s grown all over the world. Some pitaya have white insides and others have a darker and pinker color – usually the more vibrant color is associated with a sweeter taste. Nutritionally, it is high in fiber, Vitamin C, antioxidants, and prebiotics. Not only does it look pretty and taste good, it definitely adds a pop of color to any of your dishes! Especially this pancake!

Pitaya Pink Keto-Paleo Pancake Recipe

NEED TO UPDATE THIS — BASE PANCAKE INGREDIENTS

1.5 cups almond flour
1 TBSP tapioca flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 TBSP monkfruit sugar
1/4 cup almond milk

HOW TO GET THE COLOR

1 TBSP Pitaya Powder, divide among each pancake to create gradient color.

DIRECTIONS

1. Mix all ingredients together in a bowl and mix thoroughly
2. Add desired “dye” to add color to your pancakes
3. Spray pan with coconut oil
4. Heat pan to medium-low heat
5. Pour batter on and flip when one slide has solidified enough to flip
6. Top with desired fruit!
