Creamy Green Avocado Miracle Pasta!!!
Here’s an all natural pasta recipe that’s sure to tantalize your taste buds! I loved that I did not have to use a pre-made sauce or add cream. The avocado is all you need for that succulent fatty taste without the guilt….mmmmm. This is a vegan friendly recipe.
INGREDIENTS (serves 2-3)
Sauce:
– 1 medium avocado
– 1/2 -1 lemon
– 1 cup full of fresh basil leaves
– salt to taste
– pepper to taste
– paprika or red pepper flakes to taste
Sauteed veggies:
– 1 red bell pepper, chopped
– 1 cup frozen and shelled edamame
– 1 small onion, chopped
– 2 roma tomatoes, chopped
– little bit of extra virgin olive oil to coat pan
– salt and/or stevia to taste (I did not use a sweetener though. You may if it suits your taste buds)
Noodles:
– 1 pack of zero calorie Miracle Noodles per serving or plate
DIRECTIONS
1. Chop up your veggies. Sautee all of the veggies except for the tomatoes with a bit of extra virgin olive oil on a pan on high heat. Once the veggies look cooked and the onions are slightly opaque, add in the tomatoes at the end. Salt and pepper to taste.
2. To make the sauce, add the avocado, lemon juice, and basil into a food processor. Blend for about 10 seconds. Then add the salt, paprika/red pepper flakes, and pepper to taste.
3. Wash your Miracle Noodles thoroughly in warm water. Then pat try on a paper towel. Right before serving, heat them up in the microwave for about 45 seconds to 1 min.
4. Scoop some of your cream sauce onto the heated Miracle Noodles and stir until noodles are all green! They really absorb the flavors of the sauce. Mmmm…
5. Next transfer the green noodles onto a clean plate and top with your sauteed veggies.
6. EAT!!!!!
NOTES
This is absolutely DIVINE for me. It’s one of those dishes where you need to take time to think about eat bite to truly savor the freshness of the basil, the aroma of the onions, and the slight spiciness of the paprika. Of course this is all made “to taste” to experiment 1/4 tsp of things here and there to make it yours. The above recipe is how I ate it and I absolutely loved it!
This is me being surprised at how amazingly good it was!!!
You can get Miracle Noodles here on their website. As you all know, I am a HUGE FAN of feeling full without feeling the unnecessary calories. The nutrition in this meal comes from all of the fresh veggies you used. So good!!!

Wow! Amazing recipe! Love it 🙂
Can you use lemon juice instead of a lemon?
Also how much is a medium avocado?
Im not sure which size is considered medium.
Im going to go ahead and try this with lemon juice and what I think is a medium avocado.
Wish me luck 🙂
I use my veggetti to make noodles, can I use yellow squash “noodles” or zucchini “noodles” for this?
I just made this but added a handful of spinach and a handful of prawns… so yummy! Couldn’t finish it, easy lunch for tomorrow 🙂 xx
Hey Cassey!
I wanted to suggest that you should try to use 1/4-1/2 pesto in place of the fresh basil cause it’s sooo zesty and great for you! Makes this recipe go KABOOM! <3
OMG
The creamy texture of the avocado makes you feel like you’re eating a YOLO meal xDDDD
So good, thank you, Cassey! <3
So… I planned on making this tonight but everything in the world was against me today!
Went to Foodworks.. they dont carry miracle pasta anymore, so I got noodles like it for 30 calories in the entire package.
I then went to stop and shop to buy some other things at a lower cost, where I lost my phone! I spent the next 3 hours trying to track it down, but havent found it still and STILL haven’t made this recipe.
AND they ran out of edamame.
Hopefully tomorrows a better day and I can try this.. and maybe have my phone to follow your recipe easier!
I agree that half a lemon was too much lemon, it was a bit too tart for me. But overall it was delicious! I just used normal spaghetti since I didn’t have miracle noodles. But the combination of avocado sauce and the grilled veggi’s was delicious! And a great way to get your fix of pasta when you’re in the mood but also eat a bunch of vegis! I can only imagine how healthy this would be with the miracle pasta.
Even though I didn’t have any basil, edamame or fresh tomatoes at home, I couldn’t wait to try this recipe, so I made the following substitutions:
Black beans for Edamame
Canned tomatoes for Fresh Romas
Cilantro for Basil
It was delicious and my vegan husband had seconds. Now I can’t wait to try the original version. 🙂
I really enjoy the look of this recipe, but live in a small town. I want to stick to buying locally. I am also looking to just tone up, not lose weight. So my question is, can i sunstitute the miracle noodles for vermicelli rice noodle?
Tried this last night, delicious!!!
O M G this looks soo yummy! I’ve been eating avocado on a daily basis but as a dip never thought to use it as a pasta sauce but I’m going to now. I just had spelt pasta tonight but with oilive oil, tomatoes, basil, garlic and chilli it was pretty good aswell! Here’s another pasta recipe I put up on my blog: http://healthnutnutrition.wordpress.com/2012/01/31/lemon-caper-spaghetti-with-tomatoes/
Made this tonight – was yummy! Even my kids liked it! Thanks for sharing!
What’s the serving size? thank you!
I have a huge bag of avocados I bought on sale so I’ve been looking for a way to use them up
Thanks!
Half a lemon is too much lemon.
K, I’ll definitely have to try this. I love love love avocado!
Miracle noodles!! never heard of them… I definitely want to try them 😀
Thanks 🙂
I haven’t tried the recipe yet, but I could imagine that the vegetables could be prepared raw! I am going to try it out today!
Thank you,
Mica
