Fresh Vegan Spring Rolls + Lifeproof Giveaway!

Hey guys!!!

As you probably know, one of my most fave meals ever is the fresh spring roll! I’ve made these so many times and feel like I’ve perfected the recipe. I mean, I also grew up eating them. Cept when I ate em as a kid I filled my rice papers with mostly noodles and beef or pork. Nowadays, with some tweaks, I love having them as a healthy post workout meal. So full of nutritious veggies and lean protein from the tofu (you can use chicken, tempeh, mushroom etc.) Honestly the best part though is the satisfyingly chewy skin. You must go out and get some rice paper and try this. It’s so quick to make!

fresh tofu spring rolls

INGREDIENTS:

For spring roll…(multiple servings)

– rice paper pack

– block of tofu (seasoned with soy sauce, Stevia, black pepper)

– lettuce or any type of spring mix

– medley of veggies (I used carrots and purple cabbage in this recipe)

169 calories for 2 rolls

For sauce…(2 servings)

– 4 TBS of Hoison sauce

– 1/2 lemon

– 1 tsp Sriracha

135 cals for 2 servings

DIRECTIONS:

1. Chop all your veggies

2. Slice your tofu block into “steak fry” size

3. Fill your tupperware with some soy sauce (1/4-1/3 cup), Stevia (2 tsp), and black pepper (couple pinches)

4. Put your tofu steaks in the pool of soy sauce. Marinate for a few minutes.

5. Light your stove to medium high. Oil lightly. Place tofu steaks on. Pour rest of soy sauce over it. Let sizzle. Flip ater 3-5 min.

6. Fill a shallow plate with water. Dip your rice paper in – make sure all sides are wet. Lay flat on another plate.

7. Fill with veggies and tofu steaks. Wrap up like a burrito!!

8. Dip in your sauce and eat. YUM!!!

A serving costs about $0.75 when at the store it’s like $6.99! Big diff people. Big diff. Eat at home to know what’s going into your food, into your mouth, and also…to save $$!

Now for more fun stuff! It’s giveaway time! If you’re like me and LOOOOOOOVE taking pics of your food before you eat (it’s like my way of blessing the meal) then you need to seriously protect your phone from the dangers of the dining table!!! I mean seriously…ice cream, soup, sizzling platters…it’s a war zone for delicate technology! K listen, true story: my screen was shattered for a couple months and I had just found some time to get it fixed like literally the day before I filmed this video. When we filmed, I actually dropped it in that water filled plate 5 different times, 5 different ways, from 5 different heights. Each time, my heart skipped a beat. But you know what? My phone was unharmed! Isn’t it great when products actually do what they’re supposed to do? So good.

    Please Cassey see my springrolls I did in Instagram @bassantpopster and pretty pretty please let me be a winner because I suffered finding these ingredients here in Egypt’s curfew so I made it possibly perfect. And I got the iPhone 5 for my birthday and I was finding the lifeproof case and unfortunately they don’t exist here hahaha. So it would mean so much to me.

    My friend had just bought the Lifeproof case and brought it into work. He decided to joke with the janitors by screaming “I HATE this phone!” and throwing into the mop buckets. Theyd look shocked til he pulled it back out, safe.

    And $120 is WAY too much to fix a phone screen. I had to repair mine and paid $50 for the screen and replaced it myself in about 5 minutes. It’s really easy. At least on my Android it is. I’d love if you offered a case that would fit my android phone. I would never buy an iphone. I used to have an ipod touch. I got my Galaxy and never picked up my ipod again. Android is a lot better. Try it and see.

    Hey Casey.

    I’ve being a popster for maybe half a year now and I really enjoy your video.
    I’m usually either doing the monthly calendar or making one by myself. When I do an hour I’ve cutomized myself, usually, I try to have a bit of cardio and either a whole body workout or a more focus one (like I’ll do 2 or 3 arms vids, 1 cardio and 1 anything else).

    That said, I would really like if there could be more cardio workout. I know you have a lot, but there’s a part of them that are more like “quick verson” of the workout. I’m not really into those since I already workout alone at home and I like following you, it feels more… I don’t know… maybe it feels more interactive? It motivates me more at least.

    Also, when you do a peanut recipes, do you know if it’s about the same if I substitute peanut butter for another nut butter? I’m allergic to peanut so I cannot try your great recipes sometimes 🙁

    Anyway, keep up the good work!

    These look so good! I’m not a huge tofu fan so I’d probably use chicken or lean beef- but the hoison and sriracha combo… can’t beat that! I’ve been thinking about getting the lifeproof case for myself. I’m glad to know it works if you drop your phone in a plate of water haha- that happens more often than you would think around my kitchen.

I’m Vietnamese, so this is right up my alley. 🙂 I was just wondering though, I’ve always made the sauce with some peanut butter to add a little something to it, so could you maybe (pretty, pretty please? :D) share a recipe for a HEALTHY peanut butter sauce option? If you haven’t already tried the sauce mixed with peanut butter on the stove, you should definitely try it. It’s AMAZING.

    Just got back from a Hawaii vacation and a cousin just purchased a Lifeproof case. We were busy taking dolphin pictures and BAM, it fell into the ocean. The sand ate it up, and it was under water for over an hour while everyone searched high and lo for it. It was finally (thankfully) recovered and was perfectly ok!
