Sweet & Savory Cranberry Spinach Salad Recipe

Hey POPsters!!

The other night I went to a dinner party and I brought a deliciously healthy appetizer to share! I don’t know why I decided to film a video even though I was running late, but whatever, it felt opportune! Hahahaha. Here’s my recipe for one of my most FAVORITE salads in the word: Sweet & Savory Cranberry Spinach Salad! Takes less than 5 minutes to make and OMG the flavors are so harmoniously amazing.

spinach

Get a bunch of fresh, washed baby spinach!

craisins

Then top it off with some dried cranberries! I got orange infused ones just for kicks.

almonds

You can really add any nut but I love raw almonds. People usually use toasted pecans or candied walnuts.

chevre

I had to go to a pronunciation website to figure out how to say “Chevre”. Basically you just wanna crumble it on!

raspberry vinaigrette

Then drizzle on the raspberry vinaigrette! I got this from Smart & Final. I am sure you can find versions of it at your local grocery store. Trader Joes actually has a very nice one too!

TADA! The final result!!! So so good!!!

Please give it a try! It could even be the appetizer you make for your honey this Valentine’s day! By the way…what V-day recipes do you wanna see on FOOD Bites? Tell me in the comments! I’ll be filming this week.

<3 you!!!

Could you use just plain lettuce instead of Spinach?

Yum! I’m making this tomorrow but I’m gonna use feta instead just because I have it on hand. Looks so fresh and delicious. Ooh for the Valentine’s day you should make something chocolate-y! 🙂

    Hi Cassey,

You make cooking so healthy and easy. After watching Food Bites, I immediately run to the kitchen and try your recipes and cooking techniques. This coming from a person who used to think cooking was a pointless use of time. I was like, why cook when I could “eat raw,” with indisputable conveniance and benefits? You’ve changed me! Since you asked for a Food Bites suggestion, I will suggest a vegetarian stir-fry! If this idea fizzles out, maybe you could help find a way to make celery more than just my smoothie ingredient.

    Thanks for the salad recipe!

I make a salad like this but I add apples or pears, and use poppyseed dressing instead. It’s super tasty!

Oh I hoped I’d find a cool self-made dressing recipe here. Could you create some dressings just out of what everyone has like oil vinegar yogurt mustard whatsoever…I need more variations in my salads!

I do not like the flavor combo of sweet and savory mixed together ; it’s either sweet or savory for me =D
