Clean & Perfect Pumpkin Protein Pancake Recipe!

Umm so after some SERIOUS issues with the newsletter going into literally everyone’s SPAM folder (pulling hair out and have been with customer service reps all day) I have literally gone wacko. So now, I will just post the recipe.

Yesterday, I searched HIGH and LOW for the perfect pumpkin protein pancake recipe. Uhh 4P anyone!? Looked on a million healthy living blogger sites, clean eating sites, and bodybuilding forums. Couldn’t find one so I was like, screw it, let’s have play time in the kitch. And you know what…it was a success!!!! I was so surprised. So here’s my very own recipe for a super clean, super delish pumpkin pancake!

– 1/2 tsp of Stevia

– pinch of baking powder

DIRECTIONS:

1. Mix all ingredients together in a bowl.

2. Heat pan on med heat and spray with PAM.

3. Then pour batter on. Flip once small bubbles have formed on top.

WAYS TO EAT:

With cottage cheese. The best! (Someone on FB suggested putting cinnamon on the cottage!)

With sugarfree strawberry jam. Meh…

With peanut butter. Good, but didn’t allow me to savor the pumpkin flavor.

I like to (I gues sauté is the word) apple slices with pumpkin pie spice or cinnamon and about a teaspoon of homey and use that as a topper, but I have a real sweet tooth. 🙂

I’m going to try to make these like a crepe, I’m think more liquid (almond milk maybe) and then roll them with this cream cgeese/nut filing. Was wondering if you tried crepe and if so what modifications you used. Thanks!

I also tweeked this recipe a bit but as the consistency was to mushy for me.. Pumpkin puree has alot of moisture itself so I cut back the amount of pumkin and also only added one egg white as well as less of the milk. Then i added a bit of gound oatmeal. Then I kept the griddle at a lower temp and cooked slower for a longer time. Much better!

I just made these and they were delicious! At first they were too runny so I ended up adding 2 Tbsp of flour (replacing the 1 Tbsp of ground flaxseed because I don’t have any on hand). I paired them with maple agave nectar and I ate some of them with low calorie pumpkin butter <3 SOOOOO YUMMY! Thanks Cassey!

  5. Claudia Luckey says:

Mine were way too watery. Followed everything

  6. Alexis says:

Mine turned into complete pudding cakes. This was awful 🙁
Idk what I did wrong 🙁 I followed the recipe exactly.

Can’t wait to get in on this tomorrow morning. Still in such an autumnal mood as the light changes.
Quick question…does heating up protein powder destroy..uh, protein?
I’ve heard people argue and wonder if you know, Cassey!
    Thanks, much love 4eva

  8. Farah says:

Is the almond milk sweetened or unsweetened?

  9. Andrea says:

I’ve made these twice and they are delicious. I am confused about the texture of the pancake though – it doesn’t seem to cook all the way through. I’ve followed the recipe exactly. Is this the correct consistency?

    1. Alexis says:

same problem…I think im going to add almond meal and a tiny bit of flour next time…or Cassey will have to come to my house to show me lol

  10. Ana says:

Made these and not bad. Not delicious but not bad. Once I manipulate the recipe it will taste a little better. Think the 1 scoop of protein powder was too much for my taste buds. I didn’t add the stevia, don’t like the taste and added a whole egg (more protein & nutrition).

  11. MiinaMarie says:

What is the fibre content for this recipe?
    Thanks!!!

  12. Lily says:

Can you get flax seeds at Walmart?

  13. Noa says:

What can I sub for the protein powder?

    1. Lily says:

I don’t know how to comment so I am just replying. I have the same question and what can I sub for the flax seed too. I don’t even know what flax seed is…

      1. Kristin says:

you CAN get milled flaxseed at walmart! It’s with the flower. I bought mine at GNC for about $7.. packs lots of healthy omegas!!

    2. Laura says:

I sub in flax seed meal since i believe they have about the same consistency.

  14. Lisandra says:

What is the size and how many pancakes makes the serving?

    1. Lisandracobos says:

      Never mind, just saw 😉

  15. Kaycee says:

I love this recipe! I top it with PB2 and I omit the Almond Milk, and they turn out very nice! I’ll try adding the Almond Milk next time, but I just forgot to this time!

  16. Crystal says:

how do u make your cute lil pancakes look like that ? do u have a specific scooper that u use?

  17. Jenn says:

    These were delicious!

  18. Kayt says:

    Great recipe, thanks 🙂

  19. Sarh says:

I made these without the flax seed because I didn’t have any..After thoroughly cooking on both sides, the insides still seemed a little mushy…Is the flax seed necessary to get the consistency right ?

    1. blogilates says:

yes for sure, that is what they are for!

  20. Rachel says:

Great recipe. Inspirational blog. It’s nice to try a food like this that lets me branch out from my same old egg white breakfast. Tastes pretty good! Worked best cooking them on low heat. I think I am inspired to try and make up a banana version.

  21. Daria says:

Hi! Made these last night, slight variation adding in some PB2. Really yummy, can’t wait to make it again, and again, and again!

  22. Andi S. says:

Do you have any recommendations for a flax seed replacement in the recipe? I am allergic to flax seed.

    1. Coraline says:

I use ground rolled oats instead of flax seed and it seems to work fine!

  23. virginia says:

i like protein power, but i don’t always have it at home. what could i replace it with? maybe soy flour? whole wheat flour? ground oats? of course the protein content would be lower, but what do you suggest?

      1. Lily says:

Can you stiil use regular flour. And what can I sub for flax seed. I don’t know wat flax seed is!

        1. chantal says:

Do you know what Google is?

      2. Lauren says:

All I have right now is vanilla soy protein powder. I know the other pancake recipes use whey because it makes them fluffier. Will soy do the same? I’m pretty doubtful…

  24. Kat says:

These are seriously good! I made 3 batches today for myself, DH and DD#2. I substituted powdered skim milk for the protein powder until I can buy some later this week. Think almond milk would impart a nice flavor, too, because I used skim milk. But still delicious!

  25. Hello there, I discovered your blog by the use of Google even as searching for a related subject, your website came up, it seems to be great. I have bookmarked it in my google bookmarks.

  26. GiGi says:

I make these with PEA protein… all I do is mix pea protein with egg whites… BAM! Typically I will mix in a little pureed pumpkin too to thicken it all up, but seriously, you don’t even need the pumpkin!

  27. Jane says:

wat if i dont hav stevia?

    1. blogilates says:

Well if you must, regular sugar or splenda for taste. But try to go out and get some stevia.

  28. Kim says:

Do you think I could substitute eggs for olive oil? I am allergic to eggs.

    1. blogilates says:

No, but you can make a flax egg – look it up on google. It’s made out of flax seed and water.

  29. Amber says:

Just a quick question. Are they supposed to have a more pancaking consistancy or are they supposed to be a little squishy I guess.

  30. Janine says:

I think protein powders are no real food. Why do you eat it, anyway? Isn’t everything we need available from nature?

    1. blogilates says:

This is true. But when I want pancakes, I make them with protein powder instead of reg flour so I can cut down my refined carb intake and up my protein intake.

  31. Elizabeth says:

Umm so I just made these tonight for breakfast in the morning and I had to sneak a taste: SO GOOD! Oh my goodness, carb-y goodness is what I have been missing the most on this diet and I am SO excited to have pancakes! You are so awesome! 🙂 Does not feel like I am on a diet…. 😉

    1. blogilates says:

      ahh they are delish

  32. Julia says:

AH, these are so good. IN LOVE WITH THEM.

  33. Karina says:

these are so cute!! do you think i could sub peanut flour for the protein powder? about how much protein powder is in a scoop (1/4 cup? less?)

    1. blogilates says:

hmm each bag usually comes with their own scoop…whatever your “1 serving” is supposed to be.

  34. Brittany says:

I’ve been making pumpkin protein pancakes with a very similar recipe – so good!!

  35. Laura says:

How come they are so small? With what do you make them (sorry I don’t cook often)

    1. blogilates says:

      Because I wanted to? Hahaha

  36. Mary says:

    Omg these are so0o0o good!!

  37. Julie says:

I just made these for dinner. They were harder to flip than the banana protein pancakes though.

  38. Sarah says:

    Someone needs a nail trim…

  39. Aja says:

Those look so yummy. I guess I need to go grocery shopping!

  40. Julie says:

    I can’t wait to make these… tonight!

  41. Noelle says:

Try mixing some cinnamon into that cottage cheese!
