Oatmeal Whole Wheat Quick Bread Recipe

If you have a bunch of oatmeal and whole wheat flour lying around like I do and think you need to buy bread, think again! You have everything you need to make a wholesome loaf. You don’t even need yeast! I made this this weekend for my little sister when she visited me in Boston. Delicious, sweet, and almost biscuit like. This bread is a little dense.

INGREDIENTS:

*1 cup quick oats oatmeal

* 1 cup whole wheat flour

* 2 tsp baking powder

* 1/2 tsp salt

* 1.5 TBS sugarfree strawberry preserves (or you can use honey)

* 1 TBS of apple sauce (or you can use vegetable oil)

* 1 cup vanilla soy milk (or regular milk)

* optional: dash of vanilla extract and touch of cinnamon

DIRECTIONS:

1. Place everything except for the apple sauce and soy milk into a blender.

2. Mix the milk and apple sauce thoroughly. Then pour into the blender. This prevents uneven lumpiness and spots of random sweetness in the bread.

3. Set the oven to 350 degrees.

4. Spray bottom of your pan or muffin tray with cooking spray.

5. Pour the batter in and then place in the oven!

6. Should take about 20 minutes, but constantly check. Bread will be done when you puncture with a fork and no goo sticks to the prongs of your fork.

7. Enjoy with some jam and low fat butter! Yum!

Look at that dough! I actually ate some off of my fingers. It was THAT good. The aroma somehow took me back to childhood when the days were so carefree…

Ding! My bread muffins are done! A dozen!

Total recipe: 848 calories, 104 cals from fat. 12g fat. 165g carbs. 21g fiber. 7.7g sugar. 32g protein.

Per muffin or slice (assuming you cut/divided into 12 pieces): 71 cals, 9 cals from fat. 1g fat. 14g carbs. 2g fiber. 0.6g sugar. 3g protein.

  2. Just came out of the oven! Smells more like cake to me, maybe because of the vinilla soy milk, but oh well! 71 calories per slice, amazing! Never found any bread with less….
    I’m so proud, first bread I’ve ever baked, all by myself. I made my own applesauce, by boiling half an apple for about 15 minutes and then mashing them up! ( That’s what google said to do.) I used honey, since I had blueberry spread, instead of strawberry preserves. Also, I don’t have any muffin pans, neither any pan for bread, so I just used a heart shaped cake pan, so it looks extra special!

    PS: I’m so nervous, tomorrow I have an audition for my local dance group!

    I don’t eat bread, and my mom has caught up to that, so she’s been threatening by giving me only sandwiches for school… I told her not to worry herself, i’ll prepare my own food for school. She said no. So then I thought, when you look around you and believe you have no place to go, look up! That’s where Cassie shows up! If I’m already forced to eat bread, at least once in a while, might as well have some blogilates approved bread!

    I tried those breads this morning, just like your recipe and they were fabulous!! Even my husband found them delicious!! I’ve never used apple sauce instead of oil but i’m going to do it now more often, because it’s super!!

  6. These were absolutely delicious! I used honey instead of the jam as I put the jam on after they were baked and I used unsweetened almond milk instead of regular milk or soy. My batter was more runny, but they still turned out. Also I did not get 12 muffins, I only was able to get 8. I used just regular standard muffin size tins and filled them 3/4 full.

  7. Since you are using a blender anyway, you can make applesauce from scratch. Put 4 chopped apples, 2 tablespoons of lemon juice and (optional) the zest of 1 lemon into your blender, and blend away! You might need to add a little bit of water to aid the blending.

    I guarantee you this home-made applesauce is WAY more delicious than any store-bought applesauce.
