  • Bring 4 cups of water to a boil, then add the tapioca. Once the pearls have floated to the top (about 3-5 minutes), cover and reduce to a simmer for 5 minutes, until soft and chewy. * Note: Instructions may vary depending on the type of tapioca used. Follow the instructions on the package for best results.
  • Drain, then place in a small saucepan with the honey or maple syrup, stirring over low heat for 3 minutes. Remove from heat to cool.
  • To a mini blender, add the milk, protein powder, sweetener and matcha powder (if using). Blend for 10 seconds.
  • Assemble the beverage by adding the tapioca to the bottom of a tall glass. Fill the glass halfway with ice. Pour the matcha milk mixture on top, and serve immediately with a boba straw.
  • If you’d like to add a creamy layer on top, use a frother to froth the non-dairy creamer and spoon it on top of the beverage.
