  • In a small bowl, whisk together the protein powder, sweetener, baking flour and baking powder.
  • Whisk in the egg, milk and ube flavoring, if using.
  • Coat a mug or ramekin with cooking spray, pour in the batter and microwave for 60-90 seconds or until the cake is nearly set. Top with chocolate chips, if using and a dusting of monk fruit confectioners sweetener.
