In a medium bowl, combine granulated sweetener, flaxseed, ube extract, avocado oil, and milk.
In a separate bowl, combine GF flour, protein powder, baking powder, and salt.
Gradually stir flour mixture into ube mixture, until just combined.
Chill dough for 10 minutes, while the oven preheats.
Heat the oven to 350℉. Use a cookie scoop or spoon to scoop cookie dough. Roll each cookie in powdered monk fruit sweetener and place on a cookie sheet lined with parchment paper. Space cookies at least 1” apart.
Bake for 11 to 13 minutes, until cookies are just set and starting to crinkle. The cookies may not spread a lot while baking; use the back of a spoon to gently press them down a little as soon as they come out of the oven.
