  • In a medium bowl, combine granulated sweetener, flaxseed, ube extract, avocado oil, and milk.
  • In a separate bowl, combine GF flour, protein powder, baking powder, and salt.
  • Gradually stir flour mixture into ube mixture, until just combined.
  • Chill dough for 10 minutes, while the oven preheats.
  • Heat the oven to 350℉. Use a cookie scoop or spoon to scoop cookie dough. Roll each cookie in powdered monk fruit sweetener and place on a cookie sheet lined with parchment paper. Space cookies at least 1” apart.
  • Bake for 11 to 13 minutes, until cookies are just set and starting to crinkle. The cookies may not spread a lot while baking; use the back of a spoon to gently press them down a little as soon as they come out of the oven.
