Whisk together coconut milk and ube protein powder until well combined. If using, add a drop or two of ube extract to intensify the purple color. Pour into Ninja Creami pint, secure the lid, and freeze for at least 12 hours.
After the mixture is frozen, attach the Ninja Creami lid with the blade and blend using the "Lite Ice Cream" setting.
If your ice cream is crumbly after the first spin, just respin until you get the consistency you like! Feel free to add 2-3 tablespoons of almond milk or coconut milk if needed.
