  • Whisk together the peanut butter, protein powder, milk and sweetener in a medium bowl until you reach a dough consistency.
  • Combine the chocolate chips and coconut oil in a separate bowl and microwave for about 2 minutes, stirring every 30 seconds, until smooth.
  • Using 10 silicone muffin molds (or paper molds), spoon about 1 tablespoon of chocolate into the base of each, coating slightly up the sides.
  • Take the peanut butter dough and roll into 10 balls, then flatten into disks the size of the base of the muffin cup. Gently press into the chocolate without pressing to the bottom.
  • Cover each with remaining melted chocolate and sprinkle lightly with sea salt.
  • Freeze for 1 hour. Thaw slightly before enjoying.
