Vegan Green Monster Overnight Oats Recipe

 

Ahhh…I’ve been editing Bikini 3 ABS ABS ABS for a while now. My final cut keeps crashing!! So annoying. So expect that up Thursday morning unless so crazy thing happens. You’re gonna love it You’re also gonna need paper plates 🙂

Here’s a recipe I need you to try ASAP.

Green Monster Overnight Oats Recipe (from Oh She Glows)

– 1 large handful fresh spinach

– 1 large ripe banana

– 1.5 tbsp chia seeds (necessary for thickening)

– 1 cup almond milk

– 1/3 cup regular, rolled oats

1. Blend up the spinach, banana, chia seeds, and almond milk until smooth.

2. In a bowl, mix up the smoothie plus the oats.

3. Place in fridge overnight and enjoy in the morning! I topped with strawberries!

How easy is that!? I just had it this morning (even though it is Saturday’s bfast on the Meal Plan) and it was so good, it was UNBELIEVABLE!!! You must try! Even if you are not on the Vegan Challenge, it doesn’t matter. I command you. YOU HAVE TO TRY THIS. It is one of life’s hidden food gems 🙂 MMMMMMM…

Also, some exciting news! So you know how much I love Miracle Noodles (zero calorie shirataki noodles) for Asian cooking right? Well, the stars seemed to align or something because…well…Jonathan asked if I wanted to possibly show people how to cook with them on ___.

AHHH!!!

I still remember reaching out to Miracle Noodle back when I was in Boston and was so thrilled and surprised when Miracle Noodle agreed to send me a few packs for a review. It was such a big deal to me. And now, one year later, exactly, I’m going to be helping them sell their product on air. So cool! I can’t wait to tell you how to dress rehearsal goes! What should I wear? How should I do my hair? What are your fave recipes for noodles that you’d like to see me demonstrate?

I’m headed to to Philly next week. Too bad I am on the Vegan Challenge or else I’d TOTES eat a Philly Cheesesteak. Oh well, next time. When I come back to tape the real thing I will for sure! I’ll have to let you know when it is so you can call in and ask questions or do a testimonial. I’d love to hear your voice. How fun would that be!!??

OK back to editing! I hope Final Cut comes back from the dead soon…it is def in zombie mode.

    Do you just heat the oats up in the microwave the next morning @blogilates??

      Only if you want them hot. Overnight oats are meant to be eaten raw.

    Hello from over the pond here in Bristol uk, i’ve just joined blogilates and i love the workouts ….in fact i’m addicted already and have been sticking to the july calendar. I found the green monster oats recipe the other day and i just made an adapted version using what inspired me in my kitchen (non vegan this time sorry folks!). It tasted great so thought i’d share. Here it is:-
    1 handfull spinach
    1 banana
    1 apple
    1 lage table spoon organic greek yogurt
    1 table spoon organic smooth peanut butter
    big splash of semi skimmed milk
    2 slices of fresh ginger

    Blitz altogether and add to the oats and soak overnight. Cant wait for breakfast tomorrow, i know i’ll need it after todays total body workout woohoo!

    I just discovered this breakfast idea – the best thing I’ve eaten in a loooong time. Along with the banana pancakes, I now have some awesome breakfast ideas which is fab as I struggle to eat a good breakfast and lose energy and focus easily at work. Green monsters are amazing! Especially when combined with bikini blasters! My legs and muffin tops are dying but I love it!

    and for future reference, the BEST place to get a philly cheesesteak is john’s roast pork in south philly, paisan’s in the italian market is a close second.

    My favourite vegan smoothie is:

    1 cup baby spinach
    1 medium banana
    1/4 cup almond milk
    Some crushed ice
    1 packet of stevia (if you prefer it sweeter)

    I’m not doing the vegan challenge, sadly! I’ve tried altering my diet over the past couple of months…not going fully vegetarian/vegan, just expanding my food choices to those more natural/healthy. I wish I could do it with all the POPsters, but there just isn’t the right kind of foods available in driving distance for me. Kentucky really needs to step it up and get some more Whole Foods-type stores.

    Mmmmm, so I’ve been doing the vegan challenge too, and I have a most delicious recipe to share..
    It’s kind of like a super healthy version of spaghetti and meatballs, but totally vegan. Just one bag of steamed green beans (or broccoli, or any veggie that floats your boat), half a cup of light marinara sauce, some Mrs. Dash seasoning, and a boca (soy) patty, cut up into delicious bites and mixed all together.
    Sounds a bit strange, but it’s sooooo good. 🙂

    I’m so excited to try this recipe… I love green monster anything. Mmm. I know what I’m having for breakfast! I was just thinking that I should try to incorporate more veggies into my breakfast (if I’m not eating an omelette for breakfast, I generally eat oatmeal made with pb2, walnuts, flax and a drizzle of agave nectar).

    Also, I love miracle noodles. I thought the texture would be off-putting, but I actually don’t mind it. I bought the miracle noodle rice online, since my mom’s side is asian, it gives me a carb-free alternative. I’ll need to re-order more soon.

    For those that can’t afford miracle noodles, I recommend visiting the closest asian market… they have shirataki/yam noodles (basically the same thing as miracle noodles, just a different brand) that are typically a little over $1/8 oz. bag. I also get the tofu shirataki noodles (House Foods; these noodles are endorsed by Hungry Girl)… which, if the regular shirataki noodles’ texture bothers you (it’s sort of rubbery; like glass noodles. My mom, who’s Korean, loves using them as a glass-noodle substitute), the tofu adds more of a pasta-like texture, which I enjoy more. The regular shirataki noodles have 0 calories, less than 1 carb and the tofu shirataki have 20 cals/per serving (or 40 for the whole 8 oz. package), 2 g fiber, 3 g carbs…

    Anyway, I don’t watch QVC, but if you’ll be demonstrating some Miracle Noodle recipes, I’ll definitely tune in!

    I just got back from Philly for my first time too and had a Cheesesteak at the top rated place by locals on Urbanspoon. It’s not anything to brag about so you aren’t missing much so you can forget about temptation and stick to your Vegan Diet without regrets, trust me. I’ve had better cheesesteak here in Texas. Oh, and New York. New York has better cheesesteak for sure.

    You should do a miracle noodle give away!! I want them so bad but my family can’t afford them 🙁 It’d be great for us too, cause we looooove pasta and I come from an over weight family

      You should visit your local asian grocery store… if they don’t have Miracle Noodles, they’ll most definitely have another brand of Shirataki/yam noodles (which are what Miracle Noodles are) or even Tofu Shirataki noodles (I personally recommend these for pasta, as the texture is closer to pasta and the regular shirataki noodles for asian dishes) in the refrigerated section ($1-2/8 oz. bag)…. but the rice is difficult to find. I have to order those through Miracle Noodles (definitely worth it though… but it can get costly, depending how much/often you eat them).

      I hope this helps and I hope that you can try them sometime! They make a GREAT substitute for those craving carbs!

    I love ohsheglows! This sounds so good, but I hate the texture of oatmeal.
