Healthy Banana Berry Crepes Recipe

I’ve been experimenting and experimenting all week long, trying to find you the coolest and yummiest foods that are budget friendly, healthy, and easy to make. This week’s recipe gets checkmarks for all of those! Crepes. Healthy crepes! Ever walk by a giant glass window and see the guy pouring creamy batter onto a hot griddle, then watch him smother it with Nutella and fill it up with freshly chopped bananas, artistically fold it into a 1/4 circle and drizzle it with honey and top it with powdered sugar?

Oh yes my lovelies…this week I have a gorgeous crepe recipe for you but it ain’t gonna cost you $8.99 or anywhere near that. It’s gonna cost you 83 cents!! And you’re gonna feel like you’re having a guiltless YOLO meal. Nope, not an oxymoron. Ready for the ingredients? Here it is!

Directions:

1. Mix your dry ingredients together (oats, cinnamon) and blend into a fine powder in a Magic Bullet or regular blender.

2. Then add half a ripe banana, an egg (or 2 egg whites), and almond milk. Blend!

3. Take your batter and pour into a pan on low-medium heat. Just a thin layer!

4. After you see mini bubbles form on top, flip it! If you can flip it in the air – DO IT!!!! It’s exhilarating. This batter will make about 3 crepes about 8″-9″ in diameter!

5. Now fill up your crepe with fresh fruits! I used 4 strawberries and the other half of the banana! Roll it up. You’ll get 3 sleeping puppies that you can pet 🙂

6. Optional – to top, you can add nonfat Greek Yogurt and a honey drizzle!

The whole recipe without the honey and yogurt is only 250 cals with no added sugar, and using all natural ingredients! Nothing crazy here.

Ps…Been trying to make healthy bubble milk tea. It’s really hard to sub those tapioca pearls…they have a distinct chew when you bite into them. Trying all sorts of crazy things. Will let you know if I figure anything out!!!

      Hey Sophie! You can barely taste the bananas in the recipe. Here’s a tip: use unripened bananas or barely ripened ones because allt he flavor and aromas come from when the banana turns yellow! Hope I helped… 🙂

    In Asia, another popular topping alternative to tapioca pearls is aloe vera cubes. They still give you something chew on, but aren’t as chewy. Personally, I like aloe vera bits so much more because it’s healthier, great for the skin, and it tastes sweet! 🙂

    Yayy I hope you figure out a good and healthy substitute for tapioca pearls Cassey! I can try to be healthy as much as possible but bubble tea is something I’ve never been truly able to forego. If you can make it healthy you’d be the star of my life <3 (not that you aren't already!)

    For the past 6 months I’ve been trying to lose weight. So far I’ve lost 11 pounds, which I know is very little for that long but my main concern is I’ve hit a huge plateau, as in I haven’t lost weight in like one month and gained 2 pounds!! I think one reason is I’m not eating enough calories, but I’ve had a really hard time finding calorie dense meals that are still healthy. I heard that each meal should be around 400 calories, but mine are usually 250 and then I feel like I have to snack to reach my calorie goal. Any meal ideas? It would really help. For reference I’m 5’4″ and weigh about 128 pounds. Thanks!

      Woah woah woah. A few questions first 1) how much are you TRYING to lose. I am 5’4″ as well and am well aware of the goal weights and healthy bmi for women of my height, and you are WELL within them. I started out at 165 lbs and my goal was 125. I have gained a few back since to hit 128, and I am not concerned at ALL. It is literally impossible for me to lose past 125 because it is what I like to call my body’s “happy weight”. The reason you may not be losing any more is because you, too may have hit your body’s happy weight. Going under this weight may not be healthy for your body, and (depending on how much you want to lose) may actually put you in the “underweight” bmi, which is not good for you!!! This may also explain the “slow” loss. As you get closer to a healthy weight (and you ARE a healthy weight), it becomes harder and harder to lose weight. You were already starting just at 11 lbs above a happy weight, so it would indeed take a bit longer to lose any weight from there.
      2) Are you working out? Heavy workouts – including Blogilates!! – when you’re already at a healthy bmi will help you to GAIN MUSCLE. Which means that these two pounds you’ve gained probably are healthy muscle weight, and NOT FAT!

      My suggestion to you would be to look at yourself in the mirror, take pictures, etc. Give yourself a visual representation of how you look. Chances are if you compare them to pictures from 6 months ago, not only will you look thinner (11 lbs is a LOT on a 5’4″ girl, trust me!!), but you’ll probably notice that despite gaining 2 lbs on the scale, your body looks tighter and leaner and more fit and healthy. Trust me, you’re at a great weight!! Toning is the way to go! And don’t worry if that number climbs when its muscle gain – that’s just you getting STRONGER!!!!

    These crepes would be a great addition to a weekend brunch, thanks Cassey, I have a request for a future episode: veggie burgers. I’ve tried a few recipes but have never found anything so good that it kept me from buying the frozen ones at the store. They’re so expensive to buy regularly and I’m sure most of them have weird additives, so if you have a yummy homemade alternative that would be great.

    By the way, yesterday’s butt/thigh videos were by thr far the toughest series of the calendar for me.. Without the calendar I would have stopped after 1 or 2 but knowing you put them all together motivated me to finish. Thank you for your work on that particular instrument of torture 😉

    Do you know the best egg replacer to make these vegan? Love the idea but I don’t eat eggs!

      Hi Julie, I’m vegan so I don’t eat eggs either 🙂
      I think a flax “egg” would work well in this recipe, but I would also add a little baking powder (low sodium, if possible) to help make them fluffier. I think I’m going to try these on my next rest day so will report back if it works!

    Cassey, you mentioned trying to make bubble tea. I’m not really sure what that is. But you mentioned trying to replicate tapioca pearls. The closest thing I can think of is Chia Seeds. They are often used in the vegan community as a way to make pudding. I’ve seen them on the OhSheGlows blog all the time. I hope that helps! You’re crepes look beautiful! I think I would make a banana, cashew or maybe even a coconut cream to put on top of them. (I don’t do yogurt). : )
