Happy Birthday Jackelyn!!!

 

 

Hey POPsters!

Today, it is a very special day. It is the day my best friend, my little sister, was born. Happy Birthday to the coolest, funniest, craziest sister I could ever ask for. I made a very special episode of Cheap Clean Eats this week showcasing the very cake I made to surprise her. Please join me in celebrating Jackelyn’s birthday!

If you have a special occasion coming up, I suggest you make this too. So good. Here’s the ingredients you’ll need:

THE CAKE:

– 1/2 cup coconut flour

– 1/2 cup almond flour

– 5 eggs

– 2/3 cup non dairy milk (I used almond)

– 2 TBS stevia

– 2 tsp vanilla extract

– 2 lemons (make 1 tsp of lemon zest, then squeeze juice of both)

– 4 TBS greek yogurt

– 1/2 tsp baking powder

– pinch of salt

– 1/2 cup blueberries

ICING:

– 4 dates soaked in water for 1 hr (pit them)

– 1/2 block firm tofu

– 1/3 pack of tofutti cream cheese

– 1/4 cup honey

DIRECTIONS:

1. Mix all of the cake ingredients.

2. Bake cake at 350F for about 25 min.

3. Make the icing by blending all of the icing ingredients in a food processor. I am using the Breville Sous Chef. Make sure the dates are pitted.

4. Once cake cools, smother icing all over the cake. Decorate with more blueberries and coconut shreds (optional)

5. EAT!!! Cuz that’s what you do with cakes 😉

It ends up being $1.04 a slice and the cake makes 8 servings!

    Could i use 1 cup of wholewheat flour instead of half a cup of almond flour and half a cup of coconut flour? And substitute stevia for normal sugar?? Love u Cassey!!

    Ohmigosh. This recipe is so yummy! I used blackberries instead of blueberries, and they broke a little bit when I mixed up the batter and made the batter a weird grey color. The end result was abnosome! I changed the icing recipe to use greek yogurt, and it was great!

      So did mine!! I didn’t use almond flour, I used 1 cup coconut flour instead..maybe that’s the problem?

    I really liked the cake part, but the icing had a taste I wasn’t too fond of, I think it might have been the dates. Otherwise, loved this dessert and so did my family, will be making it again. Anyone have any suggestions on a different type of icing to use?

    is it just me or anyone else can’t stand stevia? i obviously don’t wanna use sugar but stevia has a terrible aftertaste (nothing like sugar) and it makes me feel sick afterwards.
    does anyone know any other healthy substitute for sugar? please help….

      Use brown sugar – it is a little less clean than stevia I think, but it will do in small quantities 🙂

      Xylitol is another substitute but I have never used it so I don’t know how it behaves.
      Bitter aftertaste of stevia is apparently due to high temperatures. I added 2 scraped vanilla pods into stevia container and it is a little bit better.

      AGAVE!!!!!!!!! AGAVE NECTAR IS AWESOME! Don’t use xylitol!!!!!!! Xylitol is what they use in toothpaste and sugar-free gum… it’s not good news! Agave nectar is almost always available organic anywhere you buy it and its sweeter than sugar so you can use less of it. It doesnt taste too good by itself, but the aftertaste is tolerable…..but then, i don’t know why you’d be eating it by itself anyway haha. if youre American, try getting some at a local store, and if you like it, you can get a giant two-pack at Costco for like $10. Hope this helped!

    Hi Cassey!
    I wanted to make this cake, but I was wondering if I could substitute the greek yogurt for anything else? The person I’m making this for doesn’t eat yogurt of any kind. And I can just use plain sugar right? or even honey?

    I sometimes wonder if this much tofu and processed ingredients, tofuti cream cheese. non-dairy milk etc are even healthy. We were taught to eat things that are made by nature and everything in moderation by my parents. But love your workouts girl!

    Unfortunately I can’t find a couple of these ingredients in my country..Without it not being a cheap thing anymore. 🙁 Perhaps I could substitute some of the ingredients but still keep it healthy. Great video and recipe though, Cassey! 🙂

      Same here Simone! I love this type of recipe but it’s not always easy to get specialist flours and stevia for example. I actually have some healthy cake recipes on my blog – I’m not claiming to be anywhere near as good as Cassey, but you might find them interesting! I originally found them for my baby but ended up eating quite a lot myself… 🙂

      I would try normal cream cheese (if you are ok with a dairy substitution). the texture should be more or less the same…
