How to Make Peanut Butter Honey Fudge!


Hey guys!

Erin and I were experimenting in the kitchen and came up with these beauties…Peanut Butter Honey Fudge Squares!

I thought I’d eat up the whole batch, but to be honest, they are so decadent and rich, that eating more than one actually becomes hard! No, seriously. Trust me. Or if you don’t trust yourself, then package them up and give it away, or invite some friends over for treats :)


Yield: 12 servings
Serving Size: 1 square
Prep Time: 5 min
Cook Time: 2 min
Chill Time: 3 hours


  • 1/2 cup smooth natural peanut butter
  • 1/4 cup coconut oil
  • 3 tablespoons granulated sugar substitute, or stevia to taste
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • Pinch sea salt
  • 1 tablespoon chopped salted peanuts (optional)


  1. In a small pot, add the peanut butter, oil and sweetener and heat over low-medium while whisking. Add the honey and vanilla and bring to a low simmer while whisking.
  2. Remove from heat, stir in salt, and pour into an 6-by-3-inch silicone loaf pan. Sprinkle with nuts, if desired.
  3. Place in freezer and chill until solid.
  4. Cut into squares and serve, or refrigerate until ready to serve.

    Yum! I’ll definitely try this. I heard that honey loses its healthy properties in hot temperature though (somewhere around 40 degrees C) so I’d suggest adding it when the mixture cools a bit!

    Cassey, I’ve noticed a lot of your recipes call for Stevia and it had me thinking about artificial sweeteners and such. Have you done any research into potential health effects from using artificial stuff? Does using something like Stevia outweigh the potential “bad” of just pure sugar cane like demerara sugar? Just wondering!

      This is certainly a hot topic. Sugar, we now know, is terrible for our bodies. It spikes our blood sugar, is the root cause of many metabolic diseases, including cancer, heart disease and diabetes. Stevia is not linked to cancer the way other artificial sweeteners are. Just like anything, moderation is key. But less sugar is WAY more important for overall good health. Every prominent doctor and nutritionist will say so.

  • I can see why this is so rich! It’s a keto fat bombs, peanut butter and coconut oil. :) I’ll just replace the sugar with a sugar substitute.
