Here’s the healthy recipe for 12 servings! You need to try! They are so creamy from the avocado and the crunch of the pistachio just finishes the flavor like nothing I’ve ever had. Instragam me pics when you’re done! #blogilates

Healthy Sunshine Muffins

 INGREDIENTS:

– 2 cups oat flour (you can put oats in a blender and make yourself)

– 2 tsp baking soda

– 2 tsp ground cinnamon

– 2 tsp pumpkin spice

– 1/2 tsp salt

– 1 orange (peeled)

– 1/4 cup stevia

– 2 large egg whites (or 1 egg)

– 1 avocado (mashed)

– 1/2 cup nonfat Greek yogurt

– 1/2 cup almond milk

– 2 cups grated carrots

– 1 cup dried cranberries

– 1/4 cup shelled and chopped pistachios

DIRECTIONS: Mix everything together except for the pistachios. Top them last. Then set oven to 375F for 15 min and bake. Omg so good like you wouldn’t believe!

    I used 1 dl (about 1/2 cup, a littlle bit less) honey instead of stevia and that worked great!! I also had almonds on top instead of pistachios and that turned out great!

    If your muffins turned out bitter it is probably due to the baking soda. Baking soda naturally produces a bitter flavour if not combined with something acidic (yogurt, orange, etc) to neutralize this characteristic. Maybe try upping the orange/yogurt next time and see how it turns out! :)

      That, or try using baking powder instead! It is essentially the same thing as baking soda, however it contains both baking soda and another chemical that naturally neutralizes the bitter taste that baking soda produces. Just note that you’ll probably need 2-3 times the amount of baking soda in order for your muffins to rise the same amount!

    Just tried these and they were AH-mazing! I used baking powder instead of soda and didn’t have cranberries. But they tasted lovely even without it~

    I don’t know what everyone’s talking about with these being bitter. I did have to change the recipe a bit, but not by much. I forgot to buy oranges, so I used a banana instead (so much for no bananas! =] ), I used blueberry nonfat greek yogurt because I wasn’t paying attention, and I don’t have stevia so I used Xylitol. I also forgot the pistachios on top. I didn’t think these changes would make a huge difference, but maybe they did. Either way, these muffins were the best things that I’ve ever tasted. Brought some to work with me for breakfast and now they just want me to bake for them constantly. (even my friend that hates avocados fell in love with them)

      I also only used about 3/4 cup of carrots. I had somewhere to be and grating them took way too long. Especially since I had a mini-grater that’s really only meant for cheese… I could see the carrots causing bitterness more than the baking soda though.

    so, what made these bitter? the baking soda? should it be baking powder?
    i didn’t even putt the other things like carrots or avocado in it, not even stevia?

      the oats make them taste bitter, so maybe try a different kind of flour.

    I didn’t even make these, but I felt like the stevia amount was waaay high, and after reading the comments it looks like that’s the case. My guess is that she’s using a cup-for-cup stevia sugar substitute, like stevia in the raw, or stevia baking blend? Just a thought.

    I agree with Len’s early post. The muffins looked so good – but due to how bitter they tasted, I had to toss the whole batch of batter after such high hopes of making them for Easter brunch. There was WAY too much stevia, too, even with using only half of what the recipe called for. A solution could be to cut the amount of baking powder in half, and although I know stevia is nutritionally preferable to other sweeteners, it does not work with these muffins (tastes like an overdose of Equal). I would recommend Agave, or leave out/cut down on some other moistening ingredient and instead add applesauce as a healthy sweetener. Good luck!

    I just made these…. Looked so good and moist… but they were bitter. I just wasted all those ingredients. :( I’m thinking you made a typo on the baking soda? Two teaspoon seems so much but I followed your recipe anyway. It’s the only reason why I think they came out bitter?

      Tried these. They were OK. They were not like pancakes, they were like eggy baanna circles. Still pretty good but not amazing.

      I just made these the other day and had to substitute sugar as well and I did almost 1/2 cup of sugar and they taste amazing! I also had to substitute twice as much almond milk for the yogurt just because I can’t stand yogurt!
