Paleo Almond Muffin Recipe!


Hey there POPsters!!!

So today I was in a super chef mode and decided to cook my heart out! It was so relaxing just listening to nice morning songs on my speakers…I felt like I was in my own world. No texts or phone calls to bother me. It really was so fabulous!

The freedom to be creative happens when your mind and environment are not clogged up. Creativity requires room. Room to move. You need to clear your mind. Be worry-free! Make sure your space is clean! I always find that the condition of my apt. is a direct reflection of my inner state. This whole past week my apt. was a DISASTER!!!! I didn’t find myself to be too productive. But this morning, I woke up, shot straight out of bed and decided that today I was gonna clean up my act!

Clothes into the hamper, shoes back in the closet, counters wiped, dishes done…ahhhh I felt sooooo free and LIBERATED! Right then and there I opened the fridge to a stash of beautiful food. It was chop chop, mush mush time!

For a while, I’ve been wanting to make almond muffins soooooo bad but never got myself to do it. Well, I just bought a super cute heart baking pan from Homegoods the other day and have been DYING to use it. So now was the perfect time!

Here’s what I made: Paleo Almond Muffins. Please take a look :)

– 1 cup almond flour (I used trader joes brand)

– 2 ripe bananas

– 1/2 cup egg whites

– 1 Tablespoon almond butter (I didn’t have any so I used unsalted natural peanut butter which btw is not paleo)

– 1 Tablespoon Pumpkin Spice (you could also uses cinnamon)

– 1 pinch sea salt


Love my heart tin! Ready to mash it up! I kept the bananas a lil chunky on purpose.


At this point, I had no idea what these would taste like and was just hoping I didn’t waste a bunch of ingredients!!! Make sure to spray your tin with some oil so that the lil guys don’t stick after you take em out from the oven. I decided to make 2 Blueberry Bliss Muffins, 2 Almond Crunch Muffins, and 2 Cranberry Craze Muffins!


After about 10-15 min at 350F in the oven…this is how they look!

I let them cool for 10 min and then used a spatula to scoop my babies out! Which do you wanna bite right now?


Imagine those juicy berries bursting in your mouth alongside the warmth of the almond bread!

I had left over batter so I also made pancakes! Didn’t alter the recipe at all! And they were yums!

    Cassey, could you make (or have you made) a blog post about how much exercise is recommended to lose weight, maintain, or lean out? Such as, how much cardio vs pilates should be done in a week? I’m starting clean eating and I’d like to lean out without losing weight, but not having a fitness background makes it difficult for me to balance out work outs. I have been playing around with cardio and pilates (30 minute pilates 3 days a week, 45 minutes cardio) and I saw decent results in 5 weeks from that but like I said, I have no fitness background. I tried following your calendar but I found that an hour a day was too much for me, and I wasn’t enjoying my workouts or sticking to them.

    oh my, that’s so true! it makes me crazy too if my flat is in a mess! makes me all cranky and stuff. cleaning up and putting the things back where they belong is just so cathartic, haha :)

    btw: i just peeled a banana with the upside-down method for the first time in my life, haha :) i was like a little kid, looking at that banana all suspiciously, wondering-slash-doubting if it would actually work, haha:)
    it did work! and it literally made me laugh bc it was so unfamiliar. :)

    thanks for continually having me try new & unknown things:) it makes me see things from different angles every now and then, which is awesome bc this keeps me appreciating the little (but beautiful) things life offers.

    Ecstatic to see a Paleo recipe on your blog, Cassey. I’ve been eating Paleo for 3+ years and am convinced it is truly the healthiest way to eat. It cured me of severe digestive disturbances; Paleo+Pop Pilates+Crossfit=Happiest mentally and physically I’ve been in all my life.

    Just inspired me to make some pancakes! Combined this recipe with your traditional banana pancakes since I didn’t have almond flour.

    – 1/2 banana
    – 1 egg
    – tablespoon oats
    – 2 tablespoons almond butter
    – 1 tablespoon almond milk
    – generous shake of cinnamon
    – shake of ground cloves
    – pinch salt

    A couple of days ago I made muffins just like that, but with coconut and another version with hazelnut. Now I’m super excited to try this, with bananas…mmh! I love experimenting in the kitchen!

    I also wanted to share that STEVIA is in fact not a natural sweetener! A chemical process takes place in order to gain the sweet powder. And this has nothing to di with the plant anymore. So I’m not sure if it’s THAT heathly… I also read that there is no evidence for health risk and that it may be a good substitution for people wth diabetes. However, it cannot be treated as a natural sweetener.

    Hi Cassey! We’re celebrating the first day of new year right here in Vietnam !
    So I know its Sunday, and its New Year, but I kinda over-indulged myself, therefore I decided to workout today. I did 20mins of cardio already, what do you suggest I should do next ?
    And is it good if I workout on a rest day too? What sort of exercise should I do then ?

      • haha i don’t even know if there’s just something sold around here (i live in Brazil), but I’m willing to bet there’s something like that on every place with a whole foods market. Anyway, it’s really great cause it’s a kind of flour that doesn’t get absorbed (is it the same with almond flour?). It’s actually called green bananas flour.

  • Hi Cassey! I was excited to see this recipe because I started Paleo a couple weeks ago! Excited to see what comes as a result! I’m finally cleaning up my diet a little (especially from sugar), and though it’s been challenging sometimes, I know I’m not addicted to sugar anymore! And I’m doing Pop Pilates and cardio, too! You have really helped inspire me to become more fit and healthy…thank you! And we love the videos….keep up the good work!

    Is it weird that I want to know what groceries you buy, how much you spend, and how often you go? Or even how you plan your meals out? My attempts to plan out my meals really only goes 3 days into the future and then I’m like “How do people do this for the whole week?” So I usually just buy a bunch of fruit and snack on it throughout the day. I always seem to run through my food WAY too quickly and I’m ALWAYS over budget. Really the key is eating the same foods everyday or preparing your meals in advance and I just never do that. Or I’m like “OMG Kraft mac n cheese is on sale for $0.50! Must buy 10!!”. Blabber post. Forgive me.

    TL:DR – I like grocery hauls. >_>

  • Cass, these look amazing! Do you think you could also use oat flour instead of almond flour? I know using almond is kind of the point, buuuuut, I have never seen almond flour anywhere before, and I have some oat flour in my pantry. What do you think!?

      I’m going to try it with ground almonds… it’s like flour, isn’t it? For I have no idea where to find almond flour :-D (in Germany. Any ideas?)

        Yes, German ground almonds should work no problem, the almond flour I get here in the US is just a little bit finer. You could also start from whole almonds and chop them in a food processor :)

    Cassey! did u mix the ingredients in the blender or just mushed them together? if i dont have natural peanut butter can i just put some peanuts and mix it in a blender?

      If you put peanuts in a blender they will make a natural peanut butter : )
