Vegan Coconut Banana Cookies

I don’t know why, but I am on a cookie kick! And so far, I haven’t had a disaster yet, so I am encouraged now that I may not be such a bad baker after all!

Today’s in-the-moment recipe involves coconut flour! I bought this at Whole Foods a few weeks ago and want to continue experimenting with it. It adds such a nice, sublty sweet essence to whatever you’re making. It’s actually quite comforting!

INGREDIENTS:

  • 1/2 banana mashed
  • 2 TBS coconut flour
  • 1/4 cup nondairy milk (you can add more if yours is a bit dry) – I used Almond Breeze Unsweetened Vanilla
  • 2 tsp Stevia – I use Stevia in the raw (extract)
  • 1/8 tsp baking powder

DIRECTIONS: Mix together and place in oven at 350F for 15-20 min!

VERDICT: Almost tastes like a macaroon! Very good. I made 8 mini cookies. They were not chewy though and just a tad dry. I find that cooking with coconut does this – things taste drier than they normally do, not sure why. Next time, I’d probably add more of the banana…or nondairy milk…or maybe some yogurt…or maybe some egg whites? Not sure. I can’t really complain though – they were very very wonderful!

  1. I added a table spoon of peanut butter (trader joe’s unsalted) and the cookies came out super soft. It tasted very good but next time I would add only 1/2 tbs of peanutbutter. Hopefully this would make it less soft.

  2. Just made these and it was an interesting experiment! I added 1/4 teaspoon each of vanilla and almond extracts, used unsweetened original hemp milk, and omitted any sweeteners because my banana was super ripe and sweet. My dough was super light and fluffy, as was the final product. However, my cookies ended uppancake flat and crumbly. The taste was amazing, and I’m glad I didn’t add any sweetener because they had light, satisfying taste without it. I’m looking forward to playing with this recipe more! Thanks Cassey!!

    These have such a great taste!! I didn’t have stevia so I used date puree. (Dates soaked in boiling water and blended into a puree.) They’re quite soft and mushy but the flavor is just so great! :)

  5. this looks really good! i love coconut so much like coconut oil and i got coconut flour today! i heard coconut flour has alot of benefits and although it’s a saturated fat, it gets absorbed by your body differently so it won’t be stored as fat! score! mine r baking in the oven right now and i cant wait to take them out and eat them :P

  6. I would try adding a little shredded coconut to the mix to add some moisture, or increase the banana. A little coconut oil might not hurt, either.

  9. I don’t get it. Mine did not turn out that fluffy! Mine were literally flat and did not look like cookies!

    • Mine too! And this frustrates me to no end, what could possibly be going wrong with a recipe this easy? I get a batter, not a cookiedough…

      • I also got a batter. A little thicker, but not cookie type dough. And after baking them for about 23 minutes they still seemed half raw :/ What went wrong with such an easy recipe??

  13. It’s food prep day and I’m totally making these! I found out this summer that my boyfriend will eat WAY more things than I thought he would – including coconut lime cookies! You HAVE to try this combo, especially if you ever crave Fruit Loops – tastes just like them, but you can make them way healthier!

  16. For coconut flour, you need less flour more liquid. For 1 cup of flour, you would need 4 eggs. I tend to blend the flours a lot using half coconut and have almond flour.

  17. can’t wait to try! apparently coconut flour absorbs a LOT of moisture! so a lot of recipes using it will add more liquid or more eggs compared to using other flours :]

  18. I will try this week, but with more banana and more milk. I will try to keep vegan this recipe. As soon as I am finished I will send you pics of those cookies, but I guess you can use coconut milk and make even more tropical taste, or try ananas juice and you have a pina colada cookie :)

    • I love, love smoothies, but I think my dagethur’s love them even more! Mango smoothies are at the top of the list at my house, but I hadn’t thought about putting unsweetened coconut milk in there! Brilliant idea and most likely give the recipe a great depth of flavor. Thanks for sharing!

  20. I always read about stuff like coconut flour and almond milk in your recipes and I’m just sitting here in Germany like.. Where do I get these things? :D oh well I’ll find them somewhere eventually

    • Bei deinem Biomarkt oder bei Edeka, man kann auch online kaufen, aber lohnt sich nicht.

      Coconut flour I haven’t even searched! Good luck :)

    • You can get them in any bio-supermarket. Or eco-shop. I know Germany has a lot of them. Don’t know exactly their names…

    • Same here, in the Czech republic… I’d love to bake stuff like this but the ingredients are just nowhere to be found. I mean, if you dig deep enough, you can find them in those little “bio” stores but they’re just so freaking expensive it hurts to even look at the prices… Such a shame :/

      • genau war heute bei edeka und hab mandeldrink und haselnussdrink gekauft, haselnuss hab ich schon probiert hammerlecker :)

        und kokosmehl ist nichts anderes als ganz fein gemahlene kokosnuss, könntest, geraspelte kokosnuss kaufen und die dann in zb ner kaffeemühle zu mehl mahlen, so mach ich es zumindest und elektrische kaffeemühlen gibts zb bei amazon.

    • You can get coconut flour in Alnatura.. or make it yourself from soaking cocosraspel, squeezing and keeping the coconut milk, dry it out in the oven on low heat

    • I’ve never heard of coconut flour. I’m gonna have to search for it. Whole foods? Someone else made a good comment, I think you should make a recipe book or put this and some other recipes into the 90 day diet. Love it girl!
