Blueberry Baked Oatmeal Recipe

Ingredients:

1/2 cup dry oats

1 cup water

1/2 scoop of vanilla whey protein powder (Muscle Milk brand)

3 egg whites (I use liquid egg whites so I don’t have to waste yolk)

1/8 tsp baking powder

small handful of blueberries

dash of cinnamon

Directions:

1. Set oven to 350F.

2. Mix all ingredients together in a pan and place in oven for 30 min.

Yummy yummy yummy. I was so hungry at this point. Waiting 30 min was like torture!!!

It came out so beautifully! No oil or sugar used. Can you believe it!!??

The finished product. It slipped right out of the pan. I didn’t even spray the bottom with Pam. So good. It was just barely sweetened by the vanilla protein powder. the berries added some tang and the oatmeal was soft like banana bread. I am DEFINITELY making this again.

I got a version of this recipe from Recipes for Gals in Figure and Bodybuilding. I love that facebook fan page. Even if you’re not thinking of entering a bikini competition, Jen has some of the cleanest most delish recipes on her page. In her original recipe, she did not use protein powder and instead used 2 packets of sugar/stevia. This will cut down the cals by 65 calories if you don’t want that extra protein.

Hope you enjoyed this recipe. I had a blast making it. I didn’t actually think it would turn out well at all, but to my surprise it was a WINNER. I am thinking I can microwave this concoction for faster results. It may not be as crispy on top though…

For those curious I followed Cassey’s recipe, but topped off my breakfast with 2 tbsp of non-fat Greek yogurt and two tsp of agave nectar and 1/3 of a large banana for some serious Breakfast Bliss. Without my toppings the entire recipe came out to about 300 calories! So not bad at all and it’s so filling! I had half for breakfast and the other half as snack before lunch.

    I made this today, and it was much better than I expected considering how much I altered the recipe! I used steel cut oats, a little less than 3 egg whites, no baking powder (whoops, realized too late I didn’t have any), and the 2 packets of Splenda rather than the protein powder. It didn’t come out in slices (maybe because of the lack of baking powder?) but I still piled it onto my dish & enjoyed it like regular oatmeal with something extra…be liberal with the blueberries, ’cause every blueberry bite is the best. :) Honestly I could only finish about 3/4 of it, it was soooo filling. Thanks for the recipe. :)

  6. Just tried this! Skipped the protein powder and added about a quarter of an apple – it didn’t come out of the pan very easily, but it was delicious in the end. Thanks for the recipe! P.S. This goes great with a little bit of peanut butter, but what food doesn’t? ;)

  7. I can’t remember where I found this recipe but it tastes really good so I thought I’d share it. My sister and I make it a lot. It only makes 1 serving but I’ve doubled, even tripled, the recipe and it turns out well, as long as you adjust the time properly.

    1/4 cup oats
    1 tsp baking powder
    1/4 cup skim milk (or soy or almond)
    1 egg white
    3 tbsp unsweetened applesauce
    Pinch of salt
    1/2 tsp cinnamon, divided
    A small handful of your choice of chopped fruits and/or nuts (I used dried cranberries and apples)
    1 tsp honey

    Combine first 6 ingredients and 1/4 tsp cinnamon and bake at 350°F for 6-7 minutes. Top with rest of cinnamon, fruits and/or nuts, and honey.

    The original recipe called for 2 tsp chopped pecans and 3/4 cup chopped apples but you can really use any fruit or nut. It’s roughly about 324 calories (if you go with the pecans and apples). Not sure why it needs baking powder so I think I’ll try omitting it next time I make it. Maybe I’ll add some protein powder to it…I’ll get back to you!

  16. Tried this recipe this morning and turned out good. But I think the pie tin I used was too big because it turned out kind of thin. What size should I be using?

  17. I just wanted to share that eggs are 60% cholesterol. And most of that is in the egg yolk… Which is why using egg WHITES is healthier. Yeah, eggs are packed with Protein which is good for EVERY one, but I would watch how many and how often you eat eggs.

  18. Is this the type of thing i can make in advance then grab it in the morning on my way to work?

    • I just tried it, it turned out really well. I used 2 eggs instead of 3 eggwhites, because I use fresh eggs from the countryside and don’t like throwing the york either. Also, there are lots of vitamins in the york which are really good for vegetarians.
      Next time I’ll try it with apples instead of berries. I think this suits well with the oat and cinnamon:)) Thanks for this recipe!!!! It’s a great alternative to cereals and milk in the morning.

      • Apples…great idea! Have you actually tried it with apples yet? I’m wondering if they need to be chopped fairly small or just slices. Going to try this tomorrow! :)

    Mmm, looks good. Actually, i’m a little sceptical about that liquid egg whites, because it does not sound like it’s healthy, but maybe i’m wrong. I have domestic animals and I always use fresh eggs and meat and also vegetables and fruits from our garden (depending on the season of the year), but I know that unfortunately not everyone has that possibility.
