Black Bean and Sweet Potato Burger

 

Prep:

Heat a skillet with non-stick spray. Once warm add the onion and garlic in to the skillet and cook until they are limp and start to brown a bit. Put the cooked onion mixture into a food processor or blender. Add the beans and potato chunks and pulse five or six times. The beans should be broken up but there should still be some small chunks. Don’t over process, as you want your bean burgers to be a little chunky.

Transfer the veggie and bean mixture into large bowl and stir in remaining ingredients and form into small 3” patties (or bigger if you’re actually going to eat it in a burger bun).

In the same skillet, heat on medium, spray non-stick spray and add the patties, cook each side until browned, about 6-7 minutes total OR you can bake them on 375° for about 25 minutes, flipping once.

Note: I omitted bread crumbs which was included in the original recipe to avoid refined carbs, but go ahead and try adding some 100% whole wheat bread crumbs if your mixture needs some more bulk.

Nutrition info: One 3” patty (50g) yields 39 calories, 0.5g fat, 6.6g carbs, and 2g protein. Each tiny patty also gives you 2g of fiber each. Yum indeed!

    I made it on red kidney beans insead (cause I didn’t have any black beans) were amazing! I used a half breadcrumbs half psyllium husk on the outside. Sooo good ^.^ will make again.

    Just a note, I dunno how she gets her numbers for calories and such but just adding the flax, sweet potato, and the beans came up pretty high. To get 39 calories for each patty you would have to make nearly 13 patties, which is just not possible with the amount of ingredients. You’d be lucky to get 5 which would be 100 calories. Still not bad, but much more than stated.

      Also, Morning Star makes a spicy black bean burger (it’s not really spicy) that’s available at Walmart. 1 patty is 110 cals., 13g carbs, 4g of fiber, and 10g of protein. So if you’re not up to making from scratch this would be a good alternative.

    Here’s a really delicious version of this burger. I also make vegan (doesn’t have to be vegan) garlice aioli to go with it and it’s AMAZING.

      Why don’t you copy the recipe and paste it into a word document before printing. I do that with recipes and lists all the time. Or if I only need certain bits of info out of a document.

    OMG this was soo good! I made itwithout the Flax, and didn’t use the full amount of ingredients. My husband and son won’t eat things like this, so I made it for lunch. I kept thinking, geeze this is a complicated lunch lol. It was so worth it though!

    These were so good! They tended to fall apart so next time I think I’ll use a little bit of egg whites and whole wheat bread crumbs to hold it together. I topped these patties off w/ some salsa and ate it as is. Even my brother, being a meat person, was satisfied with a patty on a bun. So delish! Will definitely be making these again!

    These are delicious! I had trouble getting them to form “patties” to put into the pan, so my solution was to chill them for a bit to get them to firm up before putting them on the pan. Otherwise, they worked out very well.

    I doubled this recipe and I’m going to have like 10 extra patties (I ate two big-ish ones). It made way more than expected.

    Just made these…yum! I used extra hot smoked paprika to give them a kick and served them witha big salad and some passata flavoured with paprika and cumin, and even my meat loving husband said they were delicious

    I made these and for some reason they turned out kind of liquidy? Like it was super hard to flip them over and they’re not solid, like how they look in your picture. Why could that be?

    I made these today because I was craving burgers and fries (yay for PMS) and they were great! although i had to make some changes (didnt have celery so i added more onions, food processor grinds anything to mush so i added oats [not bread crumbs] for consistency, and added diff spices because thats all I had) then i used the other half of the sweet potato to make baked “fries”, and topped my burger with lettuce and tomato and i must say that this will DEF become one of my fave new recipes 🙂
    i loooove beans and i loooove burgers and well i LOVED eating such a satisfying and filling meal 🙂
